Never have frozen peas and crisp radishes tasted so good. And, as an added over-the-top recipe bonus, this crunchy side salad is perfect for a busy weeknight. If you’re looking for a way to eat more veggies, without sacrificing flavor, look no further, this is the recipe for you. P.S. Did I mention that this recipe includes Havarti and dill as well?
B.O.B. Bob will be the first to tell you that peas aren’t something to be taken lightly. Chances are if you mention peas in his presence, you’re going to hear the story about how his mother, without warning, threw some at a waiter years ago. Yes, you read that right. His mother threw peas at a waiter. You see, Beanie, B.O.B. Bob’s mother, loved her lemons and she loved her tea, and the process of watching her make the perfect glass of iced tea truly was something to behold. Needless to say, there was the time involved to achieve perfection. Every little ounce of juice needed to be squeezed from the lemon. We’re talking total lemon annihilation.
Anyway, when a waiter ignorant of just what it takes to achieve the perfect glass of iced tea, swooped by and refilled Beanie’s glass before it was even halfway empty, they found themselves pelted with peas for their efforts. Seems a little drastic, right? Funny though. And truth be told, I wish I had been there to see it. We’ve all had those days, when perhaps our actions are a little drastic, and most likely caused by a buildup of other non-related issues. So, I say, throw the peas. It’s a harmless little thing, that will make you feel good, and probably cause everyone around you to convulse in bouts of laughter. You may not want to throw this particular pea salad though. It could get a little messy.
Ingredients:
- 1 (13-oz.) Bag Frozen Sweet Baby Peas
- 1/4 Cup Mayonnaise
- 3 Tablespoons Heavy Whipping Cream
- 2 Teaspoons Dried Dill
- 1/2 Teaspoon Kosher Salt
- 1/2 Teaspoon Freshly Ground Black Pepper
- 1 (16-oz.) Bag Radishes, Diced or Thinly Sliced
- 1 Cup Havarti with Dill, Cut into Small Cubes
Directions:
- Place the frozen peas into a pot of boiling water. Boil for 4 minutes and then drain.
- Fill a large bowl with ice and water and dump the drained peas into the bowl.
- Drain the peas well after they have completely cooled and the ice has melted.
- In a large bowl, whisk together the mayonnaise, heavy whipping cream, dill, salt, and pepper.
- Add the drained peas to the mixture and stir to combine.
- Fold in the sliced radishes and cubed Havarti.
Suggestions:
- The peas in this salad will not be mushy. You want them to still have some texture.
- If serving this salad right away, I suggest slicing the radishes, however, if you plan on serving it at a later time, I suggest dicing the radishes. It’s all about crunch factor. Choose whichever way works best for you.
- If you aren’t serving this salad right away, wait until serving it to fold in the cheese. It tends to get mushy if it sits too long.
- If you can’t find Havarti with dill at your local market, use normal Havarti instead.
Improvements:
- Replace the heavy whipping cream with buttermilk.
- Use fresh dill if available, instead of dried.
- Add a few hard-boiled eggs.
- Try making this salad with different types of cheese, such as cheddar or feta. If using salty cheese, you may want to reduce the kosher salt in this recipe.
