While many cookies are typically reserved for dessert, these brown sugar cookies encourage you to think outside of the box. Whether enjoyed alongside a warm bowl of soup, paired with a crisp salad, or as a dessert to conclude a meal, these sweet and savory cornmeal cookies are bound to become an instant favorite, no matter the time of year. With their satisfying yellow cornmeal crunch and their chewy burst of dried cranberry sweetness, they offer a unique and irresistible flavor experience.
Over the past extremely hectic post-Thanksgiving weekend, I made two new sweet and savory experimental cookie recipes using my Simple Brown Sugar Cookies (Soft & Chewy) recipe as a base. First, I made these Jalapeño Yellow Cornmeal Brown Sugar Cookies, which are an untraditional sweet and spicy alternative to regular cornbread. Then, I made these sweet and savory brown sugar cookies with yellow corn meal and dried sweetened cranberries mixed in. I was prepared to like both recipes, but what I failed to realize was just how much I would like them. I mean, seriously y’all, either of these recipes would make a great side to a warm bowl of soup or a fresh garden salad, however, they can just as easily stand on their own as a dessert at the same time.
What I’m not prepared to do with these two recipes, is pick a favorite. They’re both my beloved cookie children and I refuse to choose just one. I will, however, say, that if I were going to choose one to add to a cookie tray, tin, or plate to give as a Christmas gift, I would probably choose this recipe. Not because it’s any less swoon-worthy, but because it’s a little less likely to take any unsuspecting eater by surprise. After all, jalapeños aren’t usually an ingredient the average person expects to find in their holiday cookies. But hey, you do you. If you want to surprise a friend or two, go right on ahead and make both of these recipes. I guarantee that even though they may be a bit shocked at first, they’ll still demolish every single cornmeal brown sugar cookie you gift them.
Ingredients:
- 1/2 Cup Unsalted Butter, Softened
- 1 Cup Light Brown Sugar, Packed
- 1 Egg
- 2 Teaspoons Vanilla
- 1/2 Teaspoon Baking Soda
- 1/4 Teaspoon Kosher Salt
- 1 1/2 Cups All-Purpose Flour
- 1/2 Cup Yellow Cornmeal
- 3/4 Cup Dried Sweetened Cranberries, Very Finely Chopped
Directions:
- In a large mixing bowl, cream the butter and brown sugar together for 3 minutes on medium speed.
- Add the egg; mix for 30 seconds on medium speed.
- Add the vanilla; mix for 30 seconds on medium speed.
- Add the baking soda and salt; mix for 30 seconds on medium speed.
- Slowly add the flour 1/2 cup at a time on low speed. Mix until just combined.
- Add the cornmeal and the finely chopped cranberries to the cookie dough. Use a silicone spatula to distribute them throughout the dough evenly. Cover the bowl tightly with plastic wrap or foil.
- Preheat oven to 350 degrees.
- When the oven is preheated, use a cookie scoop or tablespoon to scoop the cookie dough out onto a Silpat or parchment paper-lined baking sheet.
- Bake for 12 minutes.
Suggestions:
- Do not preheat the oven until after you have mixed the cookie dough for this recipe. Allowing the dough to rest while the oven comes to temperature, allows the yellow cornmeal time to absorb some of the cookie dough moisture. The plastic wrap or foil will help the dough not dry out.
- These cookies will be puffed up and just starting to crack a bit on top when they are done baking. They will deflate as they cool, creating a soft and chewy cookie. If you overbake the cookies they will be dry and crispier.
- Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.
- This recipe will yield approximately 2 dozen cookies. It’s an easy recipe to double if you so desire.
Improvements:
- Add the zest of one lemon or one orange to the cookie dough.
- Replace the dried sweetened cranberries in this recipe with dried sweetened cherries or even golden raisins.
- Fold chopped pecans or almonds into the cookie dough.
