Last month, I celebrated #CookoutWeek with several other bloggers and shared recipes for Candied Sliced Jalapeños and Sweet and Spicy Candied Jalapeño Deviled Eggs. I had also planned on sharing this All-Purpose Summer Grill Seasoning with y’all that same week, however, at the last moment, I decided to hold off and experiment with it a little bit more.
The first time I whipped up this seasoning mix, it was a complete and utter failure. I mean, y’all it was really bad. Not only did I add way too much salt but I also used way too much of it and it rendered a jumbo-pack of boneless chicken pretty much inedible. Even Brenna wanted nothing to do with that disgusting poultry. Lesson learned, when it comes to chicken, this seasoning goes a long way.
After testing this seasoning on seafood, I realized that like chicken, seafood and fish also require just a little bit of this seasoning. I made grilled shrimp with it after reducing the amount of salt and thankfully they ended up having a lovely taste. Too bad the shrimp themselves were awful. Against my better judgment, I purchased some pink gulf shrimp because they were more affordable, however, those shrimp tend to have a very weird texture that sort of creeps me out. It’s almost as if I’m eating some sort of space alien pressed together hybrid creature.
Next up, was grilled burgers, which thankfully were a complete success. When it comes to ground beef, you can actually use a little bit more of this seasoning, I suggest between one and two tablespoons per pound of ground beef. There’s no need to add anything else to the burger meat, this seasoning adds more than enough flavor on its own. However, if you want to top the finished burger with a few Candied Sliced Jalapeños and a thick slice of cheese, I think you’ll find that you’ve just created yourself the most perfect burger ever.
So, after thoroughly testing this grill seasoning out, I feel pretty gosh darn confident that the final blend of herbs and spices are pretty much perfect for just about any grilled chicken, pork, beef, seafood, or vegetable dish you set your little heart on. Just remember to brush your protein or vegetable of choice with a bit of olive oil first to prevent them from sticking to the grill grates.

Ingredients:
- 1 Tablespoon Dried Parsley
- 1 Tablespoon Light Brown Sugar, Packed
- 1 1/2 Teaspoons Paprika
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- 1 Teaspoon Dried Mustard
- 1/2 Teaspoon Kosher Salt
- 1/2 Teaspoon Finely Ground Black Pepper
- 1/2 Teaspoon Ground Chipotle
Directions:
- Grind all of the seasonings together in a small spice grinder or place them in a small bowl and stir them together until well combined.
- Lightly coat whatever fish, meat, or vegetables you are grilling with extra virgin olive oil and then sprinkle with grill seasoning.
- Store the remaining grill seasoning in an airtight container.
Suggestions:
- I suggest using these Ball Dry Herb Jars to store your leftover grill seasoning in. They are durable, easy to clean, and help to keep the air out of your seasoning mix. They are also great for storing salad dressings, sauces, and marinades.
- Do not over-season your fish, meat, or vegetables. Lightly seasoning them is usually more than adequate. I did, however, find that hamburger meat required a little more seasoning. I added about 1 1/2-tablespoons per pound of ground beef.
Improvements:
- There is really not a lot of salt in this recipe, however, you can always omit it from this grill seasoning if you wish.
- Invest in a small Spice or Coffee Grinder to use specifically for blending herbs and spices. If you use the same grinder which you grind your coffee in to grind your spices, then your coffee will taste like spices and your spices will taste like coffee. Not a winning flavor combination.

- Try using this seasoning for oven-baked meats and vegetables as well.
