And one of those things is cancer, specifically childhood cancer. Childhood cancer is the number one disease killer of children in the United States and at this moment there are over 40,000 children currently fighting this disease. That sucks, right?

Now, for a little information about these cookies. These cookies are for the true vanilla fan. Not only do they have vanilla extract, but they also contain the seeds from two whole vanilla bean pods. And with a generous amount of chopped maraschino cherries and a chocolate kiss on top of each one, these cookies pretty much scream Valentine’s Day. They also taste even better after being stored for a few days. Now that’s something that doesn’t totally suck.

Ingredients:

  • 1 Cup Unsalted Butter, Softened
  • 1 Cup Powdered Sugar
  • 1/2 Teaspoon Kosher Salt
  • 2 Vanilla Beans
  • 2 Tablespoons Vanilla Extract
  • 1 Tablespoon Maraschino Cherry Juice
  • Red Food Coloring
  • 2 Cups All-Purpose Flour
  • 1/4 Cup Corn Starch
  • 1/2 Cup Maraschino Cherries, Finely Chopped
  • Approximately 24 Chocolate Kisses, Unwrapped

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, cream the butter, powdered sugar, and salt together on medium speed for 2 minutes.
  3. Using a sharp knife, split each vanilla bean down its center lengthwise. Pull the sides of each vanilla bean back and use the sharp knife to scrape the seeds out of each vanilla bean pod. Place the vanilla bean seeds in the mixing bowl and dispose of the empty vanilla bean pods.
  4. Add the vanilla extract and cherry juice to the mixing bowl; mix on medium speed for 1 minute.
  5. Add enough red food coloring to turn the mixture pink. Mix on medium speed for 1 minute.
  6. Add the flour and corn starch to the mixing bowl and mix on medium speed until just incorporated.
  7. Using a silicone spatula, fold the chopped cherries into the cookie dough.
  8. Use a cookie scoop to place scoops of cookie dough onto a Silpat or parchment paper-lined baking sheet.
  9. Bake the cookies for 14 minutes. Press an unwrapped kiss into the center of each cookie immediately after removing the cookies from the oven. Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.

Suggestions:

  • I used red gel food coloring in this recipe. It only took about 1/8-teaspoon. You can use either gel food coloring or liquid food coloring.
  • After you chop the maraschino cherries, place them on a few paper towels to help absorb any excess cherry juice. You do not want too much juice in your cookie dough.
  • These cookies taste best after they sit for a day or two. The moisture from the maraschino cherries seeps into the cookie dough and gives them a lovely texture. I suggest not eating them as soon as they come out of the oven.
  • This recipe will yield approximately 2 dozen cookies.

  • Use dark chocolate or white chocolate kisses for this recipe.
  • Drizzle icing over each cookie. Mix 2/3-cup powdered sugar with 4-tablespoons of heavy whipping cream. Drizzle this mixture over each cookie.

Currently, in the United States, there are 40,000 children actively battling cancer. The National Cancer Institute’s budget for childhood cancer is less than 4%.
