If you like your cookies to be both chewy and crunchy at the same time, then this peanut butter cookie recipe is going to become your new best friend. Not only are these cookies topped with everyone’s favorite candy, Peanut M&M’s, but they’re also packed with peanut butter flavor. Your biggest issue with these cookies will be finishing them before they crumble in your hands because these cookies are super-delicate. But you know what? A few crumbles are so worth it.
Over the past few years, Easter has been a little bit different at our house. While we have still stuffed ourselves with ham, deviled eggs, and an always-present tray of sweet baby gherkins and green olives, we have not had our Annual Easter Egg Hunt for Money, due to the high number of people on our average guest list. It seems like more and more people show up each year once they discover there is the potential to win some serious money.
And, while I am a little saddened at not hosting this event for the past few years, I will admit that it has also been nice to take a wee time out and concentrate on spending time with only my dad visiting us for the holiday, instead of what seems to be every single inhabitant within our entire little town. Shutting everyone away in our garage while we hide the eggs stuffed with cash has become almost impossible.
One thing’s for sure, no matter how many people show up at our house for the holiday, there will pretty much always be cookies. And, more than likely, those cookies will include festive holiday M&M’s because that’s just how I roll. It’s not truly a holiday without appropriately colored M&M’s to celebrate it with. Some years it may just be three people who get to enjoy them. Other years, it may be over fifty of our closest friends scarfing them down in our garage, while we hurriedly run around our yard hiding eggs for them to find.
Ingredients:
- 1/2 Cup Unsalted Butter, Softened
- 1/2 Cup Granulated Sugar
- 1/2 Cup Light Brown Sugar, Packed
- 1/2 Cup Creamy Peanut Butter
- 1 Egg
- 1 Tablespoon Vanilla
- 3/4 Cup All-Purpose Flour
- 3/4 Teaspoon Baking Soda
- 1/4 Teaspoon Ground Sea Salt
- 3/4 Cup of Grape Nuts
- 1/2 Cup Old-Fashioned Oats
- 1/3 Cup Miniature Semi-Sweet Chocolate Chips
- Peanut M&M’s
Directions:
- In a large mixing bowl, cream the butter and sugars together for 2 minutes on medium speed.
- Add the peanut butter; mix for 1 minute on medium speed.
- Add the egg and vanilla; mix for 1 minute on medium speed.
- In a small bowl, whisk together the flour, baking soda, and sea salt. Add the flour mixture to the mixing bowl; mix at low speed until just incorporated.
- Fold the Grape Nuts, old-fashioned oats, and miniature chocolate chips into the cookie dough.
- Preheat oven to 350 degrees.
- When the oven has come to temperature, use a cookie scoop or tablespoon to measure out cookies onto a Silpat or parchment paper-lined baking sheet. Press 3 Peanut M&M’s down into the center of each cookie.
- Bake for 10 to 12 minutes.
- Allow the cookies to rest for 10 minutes before carefully transferring them to a baking rack to finish cooling completely.
Suggestions:
- Do not preheat your oven until after you have mixed the cookie dough. This will give the dough a little bit of time to rest before baking, which will allow the Grape Nuts and old-fashioned oats a little bit of time to absorb the liquid in the dough.
- You can easily replace the creamy peanut butter in this recipe with chunky peanut butter.
- Definitely allow these cookies to rest before transferring them to a baking rack to finish cooling. These cookies are very delicate and will break easily.
- Once the cookies have cooled completely, store them in an airtight container between layers of wax or parchment paper.
- This recipe will yield approximately 24 cookies.
Improvements:
- Replace the creamy peanut butter in this recipe with Nutella.
- Add a few finely chopped peanuts to the cookie dough.
