This month’s “Peaches and Pepper(s)” themed Improv Cooking Challenge was the perfect excuse for me to make a big ol’ bowl of guacamole. One that wasn’t too spicy, yet still had quite a bit of delicate flavor, which everyone could enjoy. My little secret to making not-too-spicy guacamole is to add sweet peaches, just the right amount of jalapeño, a little finely minced red onion, and a touch of seasoning to round everything out.

To give this guacamole an even milder taste, make sure to soak the red onion in a bowl of water ahead of time; it will help to bring out the naturally sweet flavor of the onion. Simply peel and thinly slice the red onion and then place it in a bowl of water for at least an hour before use. You may never use red onion again without using this method first. It’s actually very surprising what a difference this simple step makes.

There are all sorts of gadgets to help make working with avocados a whole lot easier. I’ve shared a few of them with you below in the “Improvements.” However, while searching online for a few tips on how not to have avocados turn brown, I found a few suggestions that surprised even me. The first handy-dandy tip is to add the actual pit from the avocado back into the guacamole. Who knew?

On the rare occasions when I have had guacamole leftover before in the past, I have always pressed a piece of plastic wrap down into the guacamole itself to help prevent browning. A better suggestion is to pour warm water over the guacamole before storing it. Then all you need to do is simply pour the water off of the guacamole before serving it. I look forward to seeing if this little trick works, however, I guess that means that for once in my life, I’m going to need to stop myself from eating every little last bite of the guacamole first. It may be a while. I’ll let you know how it goes.

Ingredients:

  • 2 Avocados, Peeled, Pitted & Finely Diced
  • Juice of 1 Lime
  • 1/2 Teaspoon Kosher Salt
  • 1/2 Teaspoon Ground Cumin Seed
  • 1/4 Teaspoon Finely Ground Black Pepper
  • 1 Peach, Peeled, Pitted, & Finely Diced
  • 1 Jalapeño, Seeded  & Finely Diced
  • 2 Tablespoons Red Onion, Peeled & Finely Diced

Directions:

  1. Place the diced avocados, lime juice, salt, ground cumin, and pepper in a medium bowl and mash them together with a fork until relatively smooth.
  2. Add the peach, jalapeno, and red onion; stir to combine with a silicone spatula.
  3. Serve immediately with tortilla chips.

Suggestions:

  • For this recipe, you will want to use both ripe avocados and peaches.
  • Make sure to remove both the seeds and the pith from the inside of the jalapeño pepper to ensure that your guacamole will not be too spicy.
  • To help give your red onions a milder and sweeter flavor, soak them in water for at least an hour before use.

Improvements:

  • Add a clove of finely grated garlic to the guacamole.
  • Add cilantro and lots of it, especially if there are no cilantro haters around.
  • If you prefer your guacamole to be a little bit spicier, either add an additional jalapeño or a 1/4 teaspoon of ground chipotle.
  • Serve this guacamole alongside this Sweet & Tangy Pineapple Red Onion Salsa.
