Never underestimate the power of salt and pepper. Yes, they are two simple little ingredients, however, what would life be like in the kitchen without them? Well, I for one, think life would be pretty gosh darn boring, bland, and just not all that exciting. These itty-bitty Salt & Pepper Horseradish Roast Beef Biscuits are the perfect example of how salt and pepper can elevate a boring roast beef sandwich into something completely drool-tastic. Yes, I know, drool-tastic isn’t really a real word but you get my point; this is one zesty lil’ biscuit sandwich that you’re simply not going to want to pass by without taking a big ol’ bite or two out of.
Ingredients:
Biscuits:
- 2 1/4 Cups All-Purpose Flour
- 4 Tablespoons Baking Powder
- 2 Tablespoon Granulated Sugar
- 1 Teaspoon Ground Sea Salt
- 1/2 Teaspoon Ground Black Pepper
- 1/2 Cup Unsalted Butter, Cut into Small Pieces
- 1 Cup Whole Milk
- 3 Tablespoons Unsalted Butter, Melted
- Ground Black Pepper
Horseradish Sauce:
- 1/2 Cup Sour Cream
- 1/2 Cup Mayonnaise
- 2 Tablespoons Creamy Horseradish
- 1/4 Teaspoon Ground Sea Salt
- 1/4 Teaspoon Ground Black Pepper
Sandwiches:
- Deli Roast Beef
- Tomato Slices
Directions:
Biscuits:
- Preheat oven to 450 degrees.
- In a large bowl, whisk together the flour, baking powder, sugar, salt, and pepper.
- Add in the small pieces of butter and cut them into the flour for 2 minutes using a fork or pastry cutter.
- Add the milk and stir until the dough just comes together.
- Use your hands to fold the dough over on itself approximately 20 times, or just until all of the flour has been absorbed into the dough.
- Pat the dough down into a 3/4-inch thickness on a flour-covered counter. Cut biscuits out of the dough using a glass, biscuit cutter, or cookie cutter. Place the biscuits onto a Silpat or parchment paper-lined baking sheet. Roll up the remaining dough leftovers, pat them down again, and cut as many biscuits out as you can. Repeat this process until all of the dough is gone.
- Bake for 7 to 10 minutes, or until lightly browned.
- Brush immediately with the melted butter and sprinkle with a bit of ground black pepper.
Horseradish Sauce:
- Whisk all of the ingredients together in a small bowl.
Sandwiches:
- Cut each biscuit in half and spread a bit of the horseradish sauce on the inside of each half.
- Top the bottom half of each biscuit with a few slices of deli roast beef and a slice of tomato before topping with the top of each biscuit.
Suggestions:
- I used about a 1 1/2-inch cookie cutter for these biscuits because I wanted them to be appetizer size. You can cut them how big or little you like, just make sure to adjust the baking time.
- Everyone’s oven is different, so the baking time may vary. Make sure to keep a close eye on the biscuits after 7 minutes.
- You will need approximately 1 1/2 to 2 pounds of deli roast beef for this recipe.
- Cut the tomatoes very thin, so that they don’t fall off of the sandwich when you try to take a bite.
Improvements:
- Add a slice of sharp cheddar cheese to each of these biscuit sandwiches.
- Whisk some freshly chopped chives into the horseradish sauce.
- Serve these biscuits sandwiches with Twice Cooked Potatoes with Spicy Ketchup.
