S’mores Krispies Bars from Foodie Crush

S'mores Krispies Bars | Faith, Hope, Love, and Luck Survive Despite a Whiskered Accomplice

Ingredients:

  • 4 Tablespoons Salted Butter
  • 2 (10-oz.) Packages Small Marshmallows
  • 3/4 Cup Mini Semi-Sweet Chocolate Chips
  • 1 Cup Honey Flavored Graham Cracker Crumbs
  • 1 Teaspoon Vanilla Extract
  • 5 Cups Rice Cereal

Directions:

  1. Prepare a 9 x 9 pan by spreading with butter or line with non-stick aluminum foil.
  2. Melt the butter in a large pan over medium heat. Add 1 1/2 packages of the marshmallows to the pan and stir to melt. Remove from heat and stir in the mini chocolate chips, graham cracker crumbs and vanilla extract into the marshmallow. Add the rice cereal and toss to combine.
  3. Butter fingers and press the cereal into the prepared pan. Top with 2 cups of remaining mini marshmallows and broil for 5 minutes or until lightly browned.
  4. Refrigerate for 10-15 minutes. Lift the cereal from the pan and cut with a heavy knife coated with non-stick spray.

Suggestions:

  • Use a wooden spoon when working with the marshmallow mixture.
  • Wrap individual bars in wax paper, and then tie with baking twine, for a quick lunch box or picnic treat.

Improvements:

  • Add 1/2-cup slivered almonds.
  • Top marshmallow topping with additional 1/4-cup mini chocolate chips.
