I would love to say that this recipe has absolutely nothing to do with what is going on in the country and the world today with the COVID-19 pandemic, however, sadly that would be a tremendous lie. Over two weeks ago, B.O.B. Bob and I began prepping for the possibility of not being able to go out in public for necessities such as food, alcohol, paper goods, and household supplies. We approached our shopping with the intent of not going overboard, yet stocking up on the items we knew that we would normally use in our daily lives or later on in the year if they went unused.

I won’t lie to you and say that my original list of must-haves was perfect. Yes, there were many things that somehow did not make the list, requiring me to go back to the market yet another time. However, for the most part, my list had a lot of thought put into it, and since we were prepping before most of those around us, we had no issues finding the items we felt we needed most. Besides eggs, cheese, yeast, flour, butter, broth, canned tomatoes, canned beans, and evaporated milk, I made sure to stock up on long-lasting vegetables such as red potatoes, carrots, onions, and sweet potatoes.

Never being the biggest fan of canned vegetables, I didn’t want to stock up on canned goods that I knew I would not look forward to eating. I was also leery to only rely on frozen vegetables, just in case, for some reason, there should be a power failure. Instead, I knew that the smartest decision was to purchase a reasonable amount of carrots, sweet potatoes, onions, and red potatoes. I mean, honestly, when three sweet potatoes can feed two people for three meals, that’s pretty darn cost-effective. So, if you’re headed out to the market one last time, and you happen to see a few sweet potatoes, grab three to make this recipe.

Ingredients:

Sweet Potatoes:

  • 3 Large Sweet Potatoes
  • Extra Virgin Olive Oil
  • Ground Sea Salt

Maple Honey Butter:

  • 1/2 Cup Unsalted Butter, Softened
  • 1 Tablespoon Maple Syrup
  • 1 Tablespoon Honey
  • 1/4 Teaspoon Finely Ground Black Pepper
  • 1/4 Teaspoon Ground Sea Salt
  • 1/8 Teaspoon Ground Chipotle

Directions:

Sweet Potatoes:

  1. Wash and dry the sweet potatoes.
  2. Drizzle the sweet potatoes with olive oil, sprinkle with sea salt, and then use your hands to rub the olive oil and sea salt evenly over the sweet potatoes.
  3. Wrap each sweet potato tightly in a piece of aluminum foil.
  4. Place the sweet potatoes into a crockpot and cook for 6 hours on low heat.
  5. Cut each sweet potato in half lengthwise and top with maple honey butter before serving.

Maple Honey Butter:

  1. Place all of the ingredients into a small bowl. Mix with a spatula until thoroughly combined.

Suggestions:

  • Line the crockpot with a piece of foil. Even though the sweet potatoes are wrapped tightly, they may still leak, which is not fun to clean up.
  • Place the butter on the countertop to soften when you start the crockpot. When the sweet potatoes are done, the butter will be soft and ready to mix with the maple, honey, and seasonings.
  • If desired, garnish with finely chopped fresh parsley or add 1 teaspoon of dried parsley to the maple honey butter.
  • Since most sweet potatoes are fairly large, each sweet potato half is one individual serving.
