As many of y’all know, each month I take part in a group called Fish Friday Foodies, whose main goal is to share themed seafood and fish recipes each month in hopes of getting more people to cook and eat seafood and fish on a regular basis. This month’s theme hosted by Sue of A Palatable Pastime is Buddha Bowls, which are a healthy one bowl meal consisting of vegetables, grains, and an optional protein. The recipe pictured above, which is a Scallop & Kale Salad with Yogurt Curry Dressing would be a perfect example of a Buddha Bowl if you were to add rice, farro, lentils, couscous, quinoa, or even thinly roasted potatoes beneath it in a bowl.
