Buddha Bowls – #FishFridayFoodies

Scallop and Kale Salad with Yogurt Curry Dressing

As many of y’all know, each month I take part in a group called Fish Friday Foodies, whose main goal is to share themed seafood and fish recipes each month in hopes of getting more people to cook and eat seafood and fish on a regular basis. This month’s theme hosted by Sue of A Palatable Pastime is Buddha Bowls, which are a healthy one bowl meal consisting of vegetables, grains, and an optional protein. The recipe pictured above, which is a Scallop & Kale Salad with Yogurt Curry Dressing would be a perfect example of a Buddha Bowl if you were to add rice, farro, lentils, couscous, quinoa, or even thinly roasted potatoes beneath it in a bowl.

Unfortunately, I did not plan ahead for this month’s recipe and found myself unprepared while on my annual beach vacation. After much thought, I decided that it was better to bow out for this month than to throw something together and photograph it poorly at the last moment. However, I did want to take a moment to share all of the lovely Buddha Bowl recipes from our many Fish Friday Foodies members, so please take a moment to check out all of the recipes below, which may or may not help you get your zen on.

Would you like to join Fish Friday Foodies? We post and share new seafood/fish recipes on the third Friday of the month. To join our group please email Wendy at wendyklik1517@gmail.com. Visit our Facebook page and Pinterest page for more wonderful fish and seafood recipe ideas.

You are a sweetheart to still post, Colleen. I adore your scallops, whether in a bowl with grains or just as they are. Gorgeous!

    • Thanks Stacy…this is really one event that I’m sad to miss! After the Bundt issues I had this week I have definitely learned that next year I need to have everything done before I go on vacation! I always crave seafood for the entire week after we return from vacation, so I’m sure I’ll be making a few of these fantastic Buddha Bowls!

How very nice of you Colleen to join us just to share. Hope you are having a blast despite the sunburn.

    • Thankfully, the sunburn is gone…now I’m a golden brown! Looking forward to two more days of fun in the sun…or should I say, relaxing in the sun?!?!?!

Mr. Saucy adores scallops and he’d eat them on a plate, in a bowl or however they were slung at him. This looks delicious, Colleen! P~

  • How sweet are you to do this post!! Have a wonderful vacation and see you next month!

  • Very sweet of you to share the others anyway, and those scallops look delicious!

    • Thanks Caroline, I’m planning on making them again this week…Buddha style!

This looks so perfect for a night dinner . Enjoy your vacation.

  • The scallop looks yummy! I like the idea of taking the recipe and turning it into a buddha bowl. Thanks for sharing on Friday Frenzy Link Party!

    • Thanks Kelly…I’m looking forward to giving it a try…I just need to decide on which grain to use!
