Baking up a batch of deliciously sweet cookies for your sweetheart doesn’t always mean that you need to spend a lot of time in the kitchen or dirty a ton of dishes. With these chocolate chip strawberry cookies, you’ll just need a mixing bowl, a strawberry cake mix, and five common household baking ingredients. This Valentine’s Day, show that special person in your life just how much you love them with a batch of these easy-to-make cake mix cookies.
Romance isn’t receiving a dozen generic red roses, opening a sappy card riddled with unrealistic and flowery decrees, or sitting down to a candlelit dinner for two at an overly-priced restaurant. Romance is a kiss goodbye in the morning, remembering to put a new bag in the trashcan after taking out the trash, or knowing just how toasted someone likes their bread. Romance is knowing what brand of mayonnaise and mustard to buy, cleaning out the litterbox just to be nice, or scrubbing down the shower because you know that the cleaning products irritate your partner’s skin. Y’all, my love life with darling B.O.B. Bob might not always be a sappy love song, but it sure is filled with a whole lot of everyday real-life romance. I’ll take that over a dozen crappy red roses any ol’ day.
Ingredients:
- 2 Eggs
- 1 Tablespoon Vanilla
- 1/4 Teaspoon Kosher Salt
- 1 (15.25-oz.) Box Strawberry Cake Mix
- 1/2 Cup Unsalted Butter, Melted
- 1/3 Cup Miniature Semi-Sweet Chocolate Chips
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, whisk the eggs, vanilla, and salt together for 30 seconds.
- Add the cake mix to the bowl, followed by the melted butter. Use a silicone spatula to mix all of the ingredients together.
- Fold the chocolate chips into the batter until they are evenly distributed.
- Allow the cookie dough to rest for 10 minutes.
- Use a cookie scoop or tablespoon to place mounds of dough onto a Silpat or parchment paper-lined baking sheet.
- Bake for 11 to 13 minutes, or until cooked through.
- Allow the cookies to cool for 5 minutes before removing them to a baking rack to finish cooling completely.
Suggestions:
- Add the cake mix to the mixing bowl, followed by the melted butter. Placing the melted butter on top of the cake mix ensures that the eggs will not cook from the heat of the butter.
- Stir the cookie dough together until there are no longer any large streaks of cake mix in it. Try not to overmix the batter.
- Allowing the cookie batter to rest for 10 minutes allows it to firm up a bit.
- This recipe will yield approximately 2 dozen cookies.
Improvements:
- Replace the miniature semi-sweet chocolate chips with dark chocolate chips or white chocolate chips.
- Use sprinkles in place of chocolate chips.
- For a little sparkle, roll the cookies in granulated sugar before baking.
