Happy Friday everyone! Mommy’s letting me take over again today to talk about Sophia’s Grace Foundation, which is a nationwide network of volunteers, whose goal is to save the lives of needy dachshunds that suffer from major health complications. Mommy’s friend Corinne started this foundation several years ago, and spends much of her time finding forever homes for these dachshunds after they become healthy. This woman is amazing! Corinne is a real animal lover, who makes sure all of the wild animals in her community are well fed and taken care of. She has even taken in an outside cat named Nacho Kitty, to make sure he stays safe and warm in the wintertime. Her dogs aren’t too happy about this, but are quickly learning to accept that dogs must not only share this world, but sometimes their owner’s love with us kitties.
Sophia’s Grace Foundation recently held “The Sophia Grace Foundation’s Dollars for Dachsie’s Auction” through Facebook, and Mommy donated some items to the auction to help out. First, there was this Set of 3 Plush Dachshunds, which she refused to let me play with before she sent them to the highest bidder. What good are stuffed animals if you’re not allowed to play with them? She also donated Two Dozen Mini Chocolate Chip Cookies with Sea Salt to the cause. I’m not allowed to eat chocolate, so I don’t really care about those, but Mommy seemed to be upset that they made exactly two dozen cookies. She was hoping she would get to eat at least one, but no such luck.
Even though the auction is now over, you can still help improve a lucky dachshund’s life. Mommy has decided to have a contest, but this time I don’t get to pick the winner. All you have to do is guess the name of the dog pictured above with the plate of cookies. He lives outside of our house, on the stairs leading towards our kitchen. He’s supposed to help clean Daddy’s shoes off, but Daddy always forgets to use him. If no one has guessed his name after three days, I’ll start giving out hints. The first person to guess the name correctly will win Two Dozen Mini Chocolate Chip Cookies.

Mini Chocolate Chip Cookies with Sea Salt
Ingredients:
- 1/2 Cup Unsalted Butter, Softened
- 1/3 Cup Granulated Sugar
- 1/3 Cup Light Brown Sugar
- 1 Egg, Room Temperature
- 1 Teaspoon Vanilla
- 1 1/2 Cup All-Purpose Flour
- 1/2 Teaspoon Baking Soda
- 1/4 Teaspoon Salt
- 1 Cup Mini Semi-Sweet Chocolate Baking Chips
- Ground Sea Salt
Directions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream the butter and sugars for 2 minutes on medium speed.
- Add egg, mix for 1 minute.
- Add vanilla, mix for 1 minute.
- In a medium bowl, sift together flour, baking soda, and salt.
- Add the flour mixture slowly to the butter mixture on low speed, mixing just until the flour is incorporated.
- Mix in the mini chocolate chips with a spatula.
- Use a cookie scoop to drop large tablespoonfuls of cookie dough onto a Silpat or parchment paper lined cookie sheet.
- Sprinkle each cookie with ground sea salt.
- Bake for 10 minutes.
- Allow cookies to cool on cookie sheet for 3 minutes, before transferring to a wire rack to completely cool.
- Package in an airtight container.
Suggestions:
- Trader Joe’s carries inexpensive filled sea salt grinders, which can also be opened and filled with your own salt later on. I recently purchased this OXO Softworks Salt Grinder on sale at Target; I highly recommend it. It has five settings for you to choose what size grind you prefer.
- You can use any brand of mini-chocolate chips in this recipe, but Ghirardelli really does make the best ones I’ve tried so far.
- This recipe makes approximately two dozen cookies.
Improvements:
- Try using different types of sea salt, such as Alaea Hawaiian Sea Salt or Fleur de Sel.
