Buddha Bowls - Scallop and Kale Salad with Yogurt Curry Dressing - Budda Bowls are healthy one-bowl meals consisting of vegetables, grains, and an optional protein. Add rice, farro, lentils, couscous, quinoa, or even thinly roasted potatoes to your favorite salad ingredients to create a healthy, delicious, and filling Buddha Bowl.

As many of y’all know, each month I take part in a group called Fish Friday Foodies, whose main goal is to share themed seafood and fish recipes each month in hopes of getting more people to cook and eat seafood and fish on a regular basis. This month’s theme hosted by Sue of A Palatable Pastime is Buddha Bowls, which are a healthy one-bowl meal consisting of vegetables, grains, and an optional protein. The recipe pictured above, which is a Scallop & Kale Salad with Yogurt Curry Dressing would be a perfect example of a Buddha Bowl if you were to add rice, farro, lentils, couscous, quinoa, or even thinly roasted potatoes beneath it in a bowl.

Unfortunately, I did not plan ahead for this month’s recipe and found myself unprepared while on my annual beach vacation. After much thought, I decided that it was better to bow out for this month than to throw something together and photograph it poorly at the last moment.
