Y’all know just how much I love a crockpot, considering I’m always blabbering on and on about Crockpot Monday every couple of months or so. Sadly, looking back at 2018’s recipes, I came to realize that I didn’t make nearly as many crockpot or slow-cooker recipes as I would have liked to. However, the ones I did make, were pretty fantastic. Here’s hoping that next years will be just as great.
Honey Baked Ham Crockpot Collard Greens
Don’t let that leftover honey baked ham bone go to waste. Instead, use it to make ham stock, which you can then use to make these comforting sweet and spicy collard greens in a crockpot or slow cooker. You’ll discover that this flavorful side dish is truly a great accompaniment to almost any meal.
Cajun Bratwurst Slow-Cooker Soup
This bratwurst slow-cooker soup containing cannellini beans and sweet potatoes has just the right amount of Cajun kick with just a touch of sweetness.
Crockpot Cranberry Jalapeño Swedish Meatballs
Swedish meatballs with a twist. These crockpot meatballs are made using homemade sweet and spicy cranberry jalapeño jam sauce that takes just minutes to make. Bake up extra meatballs to freeze, and store some extra jam sauce in the freezer, for an easy mid-week dinner or appetizer that your entire family will love.
Slow-Cooker Sweet Potato Chocolate Mole Soup
This slow-cooker sweet potato soup is flavored with spicy mole seasoning and just a hint of chocolate for extra depth and flavor. Topped with guacamole and shredded or crumbled cheese, it’s quite a unique and satisfying bowl of soup.
Ancho Chile Lime Pork Enchiladas
Dried ancho chile peppers and fresh lime juice make these flavorful pork enchiladas truly something special without burning off all of your taste buds. These cheddar cheese-covered enchiladas are sweet, tart, smoky, and packed with flavor. They’re perfect for people who aren’t crazy about spice but still want to enjoy some delicious Mexican food.
