Dear readers, I hate that I have to do this to you, but there is just nothing to be done about it. This week’s recipe for Crockpot Southern Green Beans with Bacon is a repeat from January 2015. I came down with an insanely severe case of food poisoning this week from one of my favorite restaurants, so food and I aren’t currently the best of friends, and I’m even more pissed off that this event was a result of eating at a restaurant that B.O.B. Bob and I visit often and enjoy so much.
While tempted to let Crockpot Monday pass by this week unobserved due to my inability to get off of the couch where I currently lie huddled in a ball of pain, I’m choosing instead to go back in time and share a recipe that both B.O.B. Bob and I instantly fell in love with. Brenna is keeping guard over me and checking to make sure that I am alive every time she struts through the room, and B.O.B. Bob is keeping me stocked in sweet tea, water, and random bits of digestible food, so hopefully, by next week, Crockpot Monday will be back in full swing.

Ingredients:
- 2 (16-oz.) Bags Frozen Green Beans
- 4 Cups Water
- 6 to 8 Slices Bacon, Cooked and Crumbled
- 4 Tablespoons Light Brown Sugar, Packed
- 2 Tablespoons Worcestershire Sauce
- 1 Teaspoon Dry Minced Onion

Directions:
- Toss everything in a crockpot. Stir well to combine and cook for at least 8 hours on the high setting.

Suggestions:
- These green beans were not super salty because of the bacon I used. You may need to add a bit more salt at the end of the cooking time if you feel that they aren’t salty enough for you.
- I used dry minced onion in these green beans because I did not have a whole onion. Throw in a finely chopped onion if you have one on hand instead of the dry minced onion.

Improvements:
- Replace the bacon with a ham hock, diced ham, or country ham.
- Add freshly ground black pepper before serving.
- Serve these green beans with these Grilled Lemon Pepper Marinated Chicken Tenders or these Cilantro & Lime Marinated Grilled Chicken Breasts.
