When it comes to B.O.B. Bob and I, 99% of the time, we agree on the same foods. Neither one of us is a huge rice fan, both he and I can 100% agree that gin deserves a special place in hell, and neither of us is brave enough, as of yet, to eat a raw oyster. And, when someone asks if we would like to join them for sushi, we will both loudly reply, “No. Thank you very much, but just no.” However, when it comes to blue cheese, we both disagree. B.O.B. Bob is a true hater, and I am a huge, let me wear the foam finger, I am your biggest fan kinda gal. Unfortunately, most store-bought blue cheese dips or dressings kind of suck. So, instead of settling for just a sort of meh blue cheese dip, nine times out of ten, I’ll just make my own. This one is a perfect small-batch recipe, with lots of added herby flavor. It’s one of my go-to grabs for a quick lunch, alongside lots of fresh-cut veggies. A little goes a long way, and it makes me feel like I’m being super-guilty without really being too guilty. Honestly, y’all, I think I may have about a tablespoon with each big ol’ pile of veggies. And on days when I’m feeling extra-spicy, I’ll add a bit of Frank’s RedHot for a fiery kick. P.S. This dip is also pretty freaking fantastic drizzled over hard-boiled eggs. And even more amazing if you take the time to mash up the yolks with a bit of it to make a quick deviled egg or two. Honestly, if you’re a blue cheese fan, this is one recipe y’all need to try. And if you’re not a fan, well, you can just ignore this recipe altogether, or simply leave the blue cheese out.

Improvements:

  • You can use full-fat or low-fat mayonnaise and sour cream for this recipe. However, I suggest using the full-fat version since this dressing already contains heavy whipping cream.
  • If there’s an herb in this recipe that you don’t have on hand or simply don’t like the flavor of, just leave it out. Feel free to adjust the seasonings to taste.
  • I have used both pre-crumbled store-bought blue cheese and blue cheese that I have crumbled myself for this recipe. I much prefer the blue cheese I crumbled myself. The pre-crumbled version is drier and doesn’t seem to have as much flavor.
  • Since this dressing contains vinegar, use a glass bowl to make it and a glass storage container to store it.
  • You can enjoy this dip immediately or refrigerate it for later use. I suggest refrigerating it for at least 4 hours before use, so that the flavors have a chance to meld.
