Game night is officially back. Last year, during the coldest months, before two of our friends moved overseas, we tried to get together as a small group one night a week for a fun-filled evening with either a card or board game. Sometimes we would play at our house, and sometimes at our friend’s house. And on occasion, we would venture out into the real world and play at a brewery or bar. This year, our overseas friends are quite busy enjoying their new life, sadly far, far away from us, but we’re not letting that stop us from once again having some weekday game-filled fun. Spinner Dominoes is a current fave, along with The Uzzle. And, Santa Cookie Elf Candy Snowman always seems to be a hit throughout the holiday season, most likely because we get to slap each other so much during the game. And, of course, B.O.B. Bob’s favorite game is The Game of Life, which I have a passionate hatred for. My favorite is almost always Uno, not only because it’s such a fast-paced, easy game to play, but because our one friend has an even more passionate hatred for it than I do for B.O.B. Bob’s The Game of Life. Together, though, as a group, I think we can all agree that Clue wins the worst board game ever award. Each and every single one of us remembered it being a much better game to play when we were children. Now, as adults, it’s an absolute snoozer of a game. One thing is for sure, though. With a dip like this, game night is always a blast. Whether we’re smacking one another’s hands over and over again in an attempt to win a holiday card game, buying a house, or having kids in The Game of Life, or pissing the heck out of our friend by suggesting that we play yet another round of Uno where she ends up with the entire deck of cards in her hand, a flavorful corn chip dip like this one is always something we can agree on.

  • 1 Cup Sour Cream
  • 1/2 Cup Mayonnaise
  • 1 1/2 Teaspoons Chili Powder
  • 1 Teaspoon Dried Oregano
  • 3/4 Teaspoon Finely Ground Sea Salt
  • 1/2 Teaspoon Finely Ground Black Pepper (Additional for Garnish)
  • 1/2 Teaspoon Ground Cumin
  • 1/4 Teaspoon Onion Powder
  • 1/4 Teaspoon Garlic Powder
  • 1 (4-oz.) Jar Diced Pimentos, Rinsed & Drained
  • 4-oz. Extra-Sharp Cheddar, Freshly Grated (Additional for Garnish)
  • 1/4 Cup Grated Parmigiano Reggiano (Additional for Garnish)
  • 1 Bunch of Scallions, Chopped (Green Parts Only)
  • Paprika

Directions:

  1. In a medium bowl, stir together the sour cream, mayonnaise, chili powder, oregano, salt, pepper, cumin, onion powder, and garlic powder until well combined.
  2. Fold in the pimentos, cheese, and 3/4 of the scallions.
  3. Garnish the dip with the remaining scallions, a sprinkle of pepper and paprika, and a little more freshly grated Extra-Sharp Cheddar and Parmigiano Reggiano.
  4. Spoon into a serving bowl and cover tightly with plastic wrap. Refrigerate for at least 4 hours before serving with corn chips.

Suggestions:

  • I recommend using freshly grated extra-sharp cheddar in this recipe. Store-bought pre-shredded cheddar cheese contains anti-caking agents that can alter the texture of this dip. However, it is fine to use pre-grated store-bought Parmigiano Reggiano in this recipe. It’s less expensive, and its drier texture works well in this dip.
  • You can use Parmesan, Grana Padano, or Parmigiano Reggiano for this recipe, whichever you have available. I do, however, suggest using extra-sharp cheddar instead of mild or traditional sharp. It is drier and has a bold flavor.
  • If you want to add the white parts of the scallions, please feel free to. I find that they overpower all of the other flavors.
  • You can eat this dip right away; however, it tastes best after the flavors have time to marry.
