This week is all about gearing up for Memorial Day weekend. Three whole days folks. Three whole days with no work; happy, happy, joy, joy. I can’t wait. I’m gonna make deviled eggs to celebrate, and bread…that’s right, I said bread. Get ready for a big ol’ chance at failure; yeast and I are going into battle.
Are you curious about what’s going on with the blog rebranding? As of this morning, there is now both a logo and a Facebook cover photo; there’s so much back and forth involved in this design process. I really can’t wait to share everything with y’all, but I have a feeling it’s going to be a whole lot longer before I do.
B.O.B. Bob and I will be eating Crockpot Cajun Butter Roasted Sweet Potatoes for most of this week, and neither of us is the least bit sad about it. If there’s one recipe you make from Faith, Hope, Love, & Luck this weekend, let it be this one.
Legion of Spice gave us an Instagram shout-out last week for Faith, Hope, Love, & Luck’s Cajun Shrimp Egg Rolls. Some friends and I are already planning an outside egg-roll making get-together later this summer. This time around, my house won’t have to smell like cooking oil for an entire week thanks to the burner on the side of our grill. I love frying outdoors. It’s much safer for Brenna too.
So I realize that most people don’t think of Ceviche when they think of Memorial Day, but I plan on changing that. I’m in a serious Mexican mood lately. Basically, anything that is smothered with guacamole is my jam right now. There is not enough guacamole in the world, or olives, or tortilla chips. I want them all, with a side of this Spicy Halibut Ceviche with Casera Style Tortilla Chips from Karen’s Kitchen Stories.
I loved seeing this tweet from Shawn’s Smokehouse BBQ over the weekend. I wrote all about it HERE. They seriously overfed us, but in a good way. A way that probably helped me gain ten pounds in one meal. I think I’ll be dreaming about their mac & cheese, green beans, and beef brisket for weeks. If you don’t have plans for the big holiday weekend, head out to Warrenton or Culpeper to eat at one of their restaurants. Don’t forget to stop at Tin Cannon Brewing Company along the way for a pint of great beer.

Trader Joe’s has an Onion Dip Mix for sale now that is less than a dollar, and only contains dried onion, toasted onion, sugar, salt, garlic, black pepper, safflower oil to prevent caking, and citric acid. I’m super excited to try it this weekend. Who’s bringing the chips?
