A few ingredients, fresh strawberries, steel cut oatmeal, and a crockpot or slow-cooker are all you need to make a comforting, warm, and absolutely luscious breakfast that will be waiting for you when you finally decide to roll out of bed in the morning.
Winter’s back, and I’m genuinely annoyed. Instead of enjoying time grilling out on the deck, while admiring my newly planted flowers, I am hibernating inside of the house shivering, while my plants take shelter in our garage. I am truly looking forward to warmer days, brighter skies, and flowers safely blooming everywhere around me, but for right now, Winter has other plans.
Since Winter has so rudely made an unwelcome return, I think it’s only right that we do our best to get whatever little bit of joy we can out of it; hence this oatmeal. It’s warm, nourishing, and takes very little time to throw together, which means more time to spend snuggled underneath of a warm blanket escaping the arctic chill that insists on making its presence known.
The secret to this overnight crockpot oatmeal is placing all of the ingredients in a glass oven-safe bowl inside of a crockpot, and then adding water to the crockpot. You’re basically creating a water bath that will prevent the oatmeal from burning around its edges. Burnt oatmeal is never an enjoyable thing, and this secret technique is a simple solution to the problem.
This oatmeal isn’t overly sweet either, which means each person can doctor their bowl up exactly how they choose, with either additional brown sugar, maple syrup, or fresh sliced strawberries. The only downside to this oatmeal is that you’ll have to crawl out from underneath of your blanket to enjoy it.
Ingredients:
- 1 Cup Steel Cut Oatmeal
- 2 Cups Strawberries, Diced
- 3 1/2 Cups Milk
- 1/2 Cup Heavy Whipping Cream
- 1/4 Cup Light Brown Sugar, Packed
- 1 Tablespoon Vanilla Extract
- 1 Tablespoon Ground Cinnamon
- 1/2 Teaspoon Sea Salt
- Light Brown Sugar, Maple Syrup, or Fresh Sliced Strawberries (Optional)
Directions:
- Find a large oven-safe glass bowl that will fit inside a crockpot.
- Combine the oatmeal, diced strawberries, milk, whipping cream, brown sugar, vanilla, cinnamon, and sea salt in the glass bowl.
- Place the bowl inside the crockpot.
- Fill the crockpot with water an inch below the top of the glass bowl.
- Cook the oatmeal for 8 hours on low heat.
- Serve with additional brown sugar, maple syrup, or fresh sliced strawberries.
Suggestions:
- This oatmeal will be very thick. If you prefer your oatmeal not as thick, add additional milk.
- If reheating leftover oatmeal, you will need to add additional milk.
- This oatmeal will serve 6 to 8 people.
Improvements:
- Add 1/2 cup of unsweetened coconut to the oatmeal.
- Serve topped with sliced bananas.
- Add 1/2 cup of chopped nuts to the oatmeal.
