First Monday Favorites – February 2017

Things around here have been a little busy in case you were wondering why there has been a lack of recipe sharing this week. This weekend was all about hanging out with friends and being silly, doing a little much-needed house renovation, and baking these Chocolate-Covered Russian Rose Shortbread cookies and this Spinach and Four-Cheese Stuffed Shells pasta dish to enjoy on Super Bowl Sunday with our neighbors.

However, just because we’ve been otherwise occupied and there haven’t been any new recipes, doesn’t mean that Brenna and I have been sitting on our fat butts eating bonbons. No way, no how; mainly due to the absence of bonbons in our house at the moment. Instead, Brenna’s been floating around the house on cloud nine after having her spotted belly featured on Katzenworld’s Tummy Rub Tuesday and I spent a few days trying to decide which recipe from January was worthy of First Monday Favorites.

On the first Monday of every month, several other bloggers and I will be linking up to share our favorite recipe from the previous month. It’s our way of sharing the best of the best recipes with our readers; what recipe we each made last month that surprised, delighted and basically blew us away with how good it was. This month, I had a lot of great recipes to choose from, including these Pineapple and Bacon Collard Greens, this Rustic Slow-Cooker French Peasant Soup, and these Candied Bacon Jalapeño Deviled Eggs. Each recipe was simply mouth-watering, yet I think my absolute favorite recipe was this Slow-Cooker Spinach & Potato Sweet Curry Soup, which I made for my first Soup Saturday Swappers event. I received so much great feedback about this recipe and even though it may seem a little different, I’m fairly certain that if you give this soup a chance, you will be pleasantly surprised.
