After a Herndon Festival weekend jam-packed full of way too many gyros and copious amounts of kettle corn, you can bet your bottom dollar that “real dinners” most likely won’t be happening around here this week. If you’re anything like B.O.B Bob and me, there are many summer evenings when dinner comes in snack form. Our summer meals often consist of a few veggies, cheeses, salame, and olives quickly thrown together on a plate, or even a bag of tortilla chips served alongside homemade guacamole. Using a crockpot to whip up a simple dip only helps bolster my need to spend hot humid evenings doing as little as humanly possible. Add a bag of chips, a few chopped veggies, a loaf of crusty bread, and enjoy a lazy hazy summer evening snack-a-thon out of the kitchen.
