First Monday Favorites – July 2018

Dad's Country Garden Potato Salad - This country potato salad is made using fresh ingredients straight from the garden, along with creamy mayonnaise and a few simple ingredients. Loaded with hard-boiled eggs, finely chopped celery, fresh parsley, and chopped garden scallions or spring onions, this flavorful side salad is one that any dad would be thrilled to be served.

Picking a favorite recipe for last month was pretty much next to impossible y’all. I kinda loved them all. Which is crazy considering I shared eight completely new recipes in the month of June. So, while I did eventually pick Dad’s Country Garden Potato Salad as my overall favorite, I thought I’d share a list of all my other June recipes with y’all this month as well. They were all so darn good and most of them would be absolutely perfect to make for the 4th of July holiday. Also, I feel like a mother that has just claimed that one of her children is her favorite and I simply can’t handle the guilt. I kind of at least need to acknowledge their awesomeness.

Dad's Country Garden Potato Salad

Ingredients:

  • 2 1/2 Pounds Red Potatoes, Peeled & Cubed
  • 1 Teaspoon Sea Salt
  • Water
  • 6 Hard-Boiled Eggs, Chopped
  • 1 Cup Mayonnaise
  • 1 Bunch Scallions or Spring Onions, Chopped (Green Parts Only)
  • 1/4 Cup Fresh Parsley, Chopped
  • 3 Ribs Celery, Finely Diced
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Finely Ground Black Pepper
  • 1/2 Teaspoon Sweet Paprika

Directions:

  1. Place the potatoes and sea salt in a large pot over high heat covered by at least 2-inches of water. Cook for 18 to 25 minutes, or until fork tender.
  2. Drain the potatoes and set aside for 1 hour to cool.
  3. In a large mixing bowl, gently fold together the drained potatoes, chopped eggs, mayonnaise, scallions, parsley, celery, salt, pepper, and paprika until well combined.
