Crockpot Rice Chex Mix | Faith, Hope, Love, and Luck Survive Despite a Whiskered Accomplice

This is yet another one of those crockpot recipes that you could easily make in an oven, in about 1/4 of the time, but where’s the fun in that? Plus, it is Crockpot Monday, so taking more time to do something is pretty much the norm. Am I selling this recipe to you yet? Probably not.

For me, this recipe worked because I could flit in and out of the kitchen to stir the crockpot every so often between bouts of cleaning, laundry, and preparing “Grandma’s Room” for a house guest we’re expecting this week. It’s been a while since I’ve dusted or vacuumed in there, so it was pretty gosh darn necessary to spruce up the place a bit.

Since this recipe only takes a few hours, I suggest doing it on a Monday when you have a long holiday weekend. It’ll give you something to snack on during the day, and if you eat enough of it, perhaps you won’t even have to make dinner. Not that I would know anything about that…munch…munch!!!

Crockpot Rice Chex Mix | Faith, Hope, Love, and Luck Survive Despite a Whiskered Accomplice

Ingredients:

  • 8 Cups Rice Chex
  • 2 Cups Mini Pretzels
  • 1 1/2 Cups Salted Peanuts
  • 6 Tablespoons Unsalted Butter, Melted
  • 1/4 Cup Worcestershire Sauce
  • 2 Teaspoons Kosher Salt
  • 2 Teaspoons Granulated Sugar
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Dried Parsley
  • 1/2 Teaspoon Onion Powder
  • 1/2 Teaspoon Paprika
  • 1/4 Teaspoon Dry Mustard
  • 1/4 Teaspoon Ground Chipotle

Directions:

  1. Place the Rice Chex, pretzels, and peanuts into a crockpot.
  2. In a small bowl, whisk together the remaining ingredients.
  3. Slowly pour the liquid over the crockpot mix, stirring gently with a silicone spatula. Mix gently until well combined.
  4. Cover the crockpot with a lid, leaving a 1/4-inch opening to allow any steam to be released.
  5. Cook on low heat for 2 1/2 to 3 hours, stirring every 1/2-hour for the first 2 hours. After 2 hours, stir every 15 minutes until you feel the mix is brown enough for your taste.
  6. Divide the Chex mix between two baking sheets lined with parchment paper, and allow to cool for 3 hours before storing in an airtight container.

Suggestions:

  • Every time you stir the Chex mix, wipe any condensation off of the inside of the lid with a paper towel.
  • A few pieces will stick to the bottom of the crockpot and be burnt, make sure to toss them out before serving.
  • If you’re not a huge fan of sodium, decrease the amount used in this recipe. Try using 1/2 to 1-teaspoon, which is probably more than adequate for this recipe. B.O.B. Bob just happens to like salty snacks.

Improvements:

  • Add mini cheese crackers or goldfish to the Chex mix.
  • Add more ground chipotle or cayenne if you like a little spice.
