Sometimes what seems like a great idea ends up not being so great. Take this soup for example. I was in the mood for something different, something comforting, something that would help me to get rid of the mass amount of tomato juice I now have stock-piled due to the overabundance of tomatoes going on in our “back field.” Reality set in pretty quickly after eating this delicious soup however. Tomatoes and me just do not get along well. The acid in them leaves me in pain every summer when I over indulge. I get this mysterious phantom pain in my side that lasts for days, which no doctor seems to be able to give me a diagnosis for. You can only see a physician so many times for the same ailment before you begin to realize it’s just simpler to quit eating the damn tomatoes. It’s a shame that I’m not able to eat this soup every day though, because it is pretty darn amazing, and I can only imagine how wonderful it would be on a cold winter’s day when I was perhaps feeling a little bit under the weather. The only problem would be that it would most likely end up making me feel even worse.
Ingredients:
- 4 Cups Tomato Juice
- 1 1/2 Cups Chicken Stock
- 1/4 Cup Sweet Tea Vodka
- 1/4 Cup Heavy Whipping Cream
- 5 Tablespoons Light Brown Sugar
- 3 Tablespoons Sour Cream
- 1 Teaspoon Onion Powder
- 1/2 Teaspoon Kosher Salt
- 1/2 Teaspoon Freshly Ground Black Pepper
- 1/4 Teaspoon Garlic Powder
- Butter (Optional)
- Pineapple Sage or Basil (Optional)
Directions:
- In a large saucepan, mix all ingredients together over high heat.
- Bring to a rolling boil and continue to cook for 10 minutes.
- Garnish soup with a small pat of butter and ribbons of pineapple sage or basil on top.
Suggestions:
- Make this soup using homemade tomato juice from your garden tomatoes.
- I used pineapple sage to accent the soup that I made, but it is not an herb that most people have in their garden. Try using fresh basil, oregano, or even chives if you have those growing.
- The brown sugar in this soup helps to cut down the acid from the tomatoes.
Improvements:
- Garnish with freshly shredded white cheddar cheese.
- Serve with bacon crumbled over the top.
