So by now, most of you know that B.O.B. Bob did in fact order me a new crockpot and that I have named her Miss O’Hara. She’s my girl! This little meatball recipe was the first thing she every turned out and it was just perfection in a crockpot as far as I am concerned. Sure it may have been smarter for me to test Miss O’Hara out at a normal time of day instead of 8:00 at night the day she arrived, but that’s really just not how things work around here. I’m sad to say it’s pretty gosh darn normal for me to be taking something out of the crockpot sometime after midnight; there just aren’t enough hours in the day to get everything done. I feel the need to use the time I have and refuse to allow “normal hours” to deter me from my goals. Even if that results in the smoke alarm going off and waking up half of our neighborhood in the process.

Apparently, Miss O’Hara gets all heated up right quick. She gets so hot and bothered that she creates lots of smoke and steam, which apparently my super-duper-crazy-sensitive smoke detector does not agree with. Needless to say, B.O.B. Bob and I are quite used to this by now. My job is to open the kitchen window, turn on the oven fan, and sit back and hope that the alarm will eventually fade out. B.O.B. Bob’s job is to take every smoke detector affected down off of the ceiling, remove the batteries, and mutter bad evil words under his breath while doing so. Brenna’s role is to scream loudly through all of this. She is certain that we have no idea that the house is indeed on fire and that we must evacuate as quickly as possible. What can I say? If nothing else, that little girl will ensure that B.O.B. Bob and I never burn to death. She’s almost louder than the alarm.

So what words of wisdom can I share from this whole turkey meatball experience? First, perhaps you should buy a house where the oven fan and exhaust actually go somewhere, like outside. Ours doesn’t, it’s all just for show. Lucky us. Second, maybe you shouldn’t feel the need to have a smoke detector in every room. Unfortunately, I have had the need for this drilled into me from an early age, when my father went room to room late at night testing alarms to make sure they worked, scaring the living bejeezus out of everyone in the process. You don’t mess around with fire folks, and if that means having over eight smoke detectors in your teeny tiny house as well as three fire extinguishers, then so be it. Safety first. We wouldn’t anything bad to happen to Miss O’Hara.

Ingredients:

Meatballs:

  • 1 Pound Ground Turkey
  • 3/4 Cup Panko Bread Crumbs
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Dried Parsley
  • 1/2 Teaspoon Ground Black Pepper
  • 1 Tablespoon Extra Virgin Olive Oil

Sauce:

  • 1/2 Cup Marmalade
  • 1/2 Cup Light Brown Sugar, Packed
  • 1/2 Teaspoon Red Pepper Flakes
  • 1/2 Teaspoon Dried Minced Onions
  • 1/4 Teaspoon Kosher Salt
  • 1 (12-oz.) Bottle Lager Beer

Directions:

Meatballs:

  1. In a large mixing bowl, combine all of the meatball ingredients except for the olive oil, using your hands.
  2. Form the meatball mixture into evenly shaped 1-inch balls.
  3. If using a crockpot with a brown/sauté option, sauté the meatballs in the olive oil just until browned. If your crockpot does not have a brown/sauté option, brown the meatballs in olive oil in a large sauté pan over medium-high heat just until browned.

Sauce:

  1. Add all of the sauce ingredients to the browned meatballs in the crockpot, mix well, and then cook on high for 4 hours.

Suggestions:

  • Do not use cheap beer in this recipe. The better the beer, the better the meatballs. This is not the occasion to use any sort of “light” beer.
  • There is enough sauce in this recipe for two batches of meatballs. More meatballs are never a bad thing.
  • If you aren’t into spicy food, you may want to cut the amount of red pepper flakes used in this recipe to 1/4-teapooon. If you prefer super spicy food, you may want to increase the red pepper flakes used in this recipe to 1-teaspoon. I personally feel that 1/2-teaspoon is just right; spicy and edible.

      • Replace the marmalade with pineapple, apricot, or peach preserves.
