Delicious and nutritious quick weekday oatmeal for one in five minutes. There’s no longer any excuse not to have a healthy breakfast during the week.
We’re all a little guilty of not making great choices when it comes to what we put in our mouths, especially at breakfast time. I know that I myself have a hard time eating a healthy breakfast before heading off to work and often find myself eating a combination breakfast/lunch that probably isn’t the most nutritious. This year, I’m vowing to look a little closer at the foods I eat and attempt to make healthier choices whenever possible.
Today’s recipe isn’t so much of a recipe as it is a reminder that a comforting and healthy breakfast takes as little as five minutes to make. In addition, you’ll save loads of money making your own oatmeal, and also be able to control exactly what ingredients go into it. With some frozen fruit and a little bit of seasoning, bland oatmeal can be quickly transformed into something you’ll be seriously excited to get out of bed for, which won’t make you late for work.
Ingredients:
- 1/2 Cup Old Fashioned Oatmeal
- 1/2 Cup Frozen Blueberries
- 1 Cup Water
- 1 Tablespoon Honey
- 1 Tablespoon Heavy Whipping Cream
- 1/4 Teaspoon Vanilla Extract
- Pinch of Sea Salt
- Pinch of Ground Cinnamon
Directions:
- Place all of the ingredients into a small saucepan over medium-high heat.
- Cook for five minutes, stirring constantly.
Suggestions:
- For a healthier version, feel free to leave out the heavy whipping cream called for in this recipe.
- While it is cooking, stir the oatmeal with a silicone whisk.
- I like to top the oatmeal with a few additional frozen blueberries for texture. It also helps to cool the oatmeal down a bit.
Improvements:
- Replace the frozen blueberries in this recipe with frozen cherries, peaches, raspberries, strawberries, or blackberries.
- Serve topped with a sliced banana.
- Swirl a pat of butter into the cooked oatmeal before serving.
