Looking back through the Faith, Hope, Love, & Luck recipes from the month of January definitely showed that B.O.B. Bob and I have been trying to be a little bit healthier when it comes to our eating habits. I say a little bit because let’s just face it, we are nowhere near perfect when it comes to eating completely healthy. We have a long way to go and chances are that there are going to be a whole lot of deviled eggs, warm fluffy biscuits, and corned beef that get in our way. However, at least we filled in the gaps with this Cajun Bratwurst Slow-Cooker Soup, these Peanut Butter & Chocolate Chip Granola Squares, and this Healthy Shrimp & Rice Vermicelli Pho.
Perhaps the reason I chose this Small-Batch Ginger & Peach Jam for my favorite recipe last month was due to the fact that we had been eating so healthy. After all, every once and awhile you need to treat yourself, right? Not only was this peach jam super flavorful and full of sugary spiciness, it also tasted lovely as a topping for this Ginger & Peach Jam Cake. Hey, if you’re gonna cheat on your diet, you might as well eat jam and cake, right? Yeah, I think we’re definitely gonna need some help with this whole diet thing.

Ingredients:
- 4 Cups Frozen Sliced Peaches
- 1/4 Cup Granulated Sugar
- 1/4 Cup Crystallized Ginger, Finely Chopped
- 1/4 Teaspoon Sea Salt
- Juice of 1 Lemon
Directions:
- Place all of the ingredients in a medium-size non-reactive metal pot over medium heat.
- Cook for 30 minutes, stirring often.
