Caprese salad, with its seasonal ingredients, vibrant colors, and refreshing flavors, is a classic summertime staple. This easy-to-assemble great northern bean salad is made with fresh basil, sun-ripened tomatoes, and creamy fresh mozzarella pearls. For a twist on the traditional recipe, try this no-cook bean salad that combines canned great northern beans with classic Caprese salad ingredients. Not only does this flavorful side dish complement most summer meals, but it also helps keep your kitchen cool during the hot and humid months of summer.
There are certain things in life that I’m learning never to be ashamed of. Saying no, when I’ve reached my goldarn limit because, at the end of the day, I am the only one living my life, and therefore only I can decide just how much bull hockey I can put up with before some serious damage is done to my very own mental state. I’m kind of over putting others first when they have zero regard for how their actions affect me. Next up, my love of anything and everything Hallmark Channel. Is it fluffy? Yes. Is there an algorithm to its sickeningly sweet holiday madness? Hell, yeah. But ya’ know what? At the end of the day, if it makes me happy or if it makes me sad-cry and let out some pent-up feels, no harm, no foul, right? And last, but certainly not least, using canned beans instead of dried beans in a recipe. They’re quick, they’re easy, and at the end of the day, I think they taste one hundred percent better than dried beans. Plus, I like their softer texture. So you know what? I refuse to have any shame. If you feel like soaking your beans for hours on end, you do you. Meanwhile, I’ll be opening up a can of great northern beans and making this salad in under ten minutes.
Ingredients:
- 2 Tablespoons Extra-Virgin Olive Oil
- 2 Tablespoons Balsamic Vinegar
- 1 Tablespoon Honey
- 1/2 Teaspoon Finely Ground Black Pepper
- 1/2 Teaspoon Onion Powder
- 1/2 Cup Fresh Basil, Finely Chopped
- 1 (15.8-oz.) Can Great Northern Beans, Rinsed & Drained
- 1 (8-oz.) Package Fresh Mozzarella Pearls
- 8-oz. Cherry or Grape Tomatoes, Halved
Directions:
- In a large glass bowl, whisk together the olive oil, vinegar, honey, black pepper, and onion powder until well combined.
- Add the chopped basil, beans, mozzarella, and halved tomatoes. Gently stir to combine.
Suggestions:
- Use a glass bowl to make this salad. When it comes to using vinegar, I always avoid any plastic or metal containers.
- This is the type of recipe that you will want to use high-quality olive oil, balsamic vinegar, and honey to make. It will make a huge difference in taste and you won’t need a huge amount of each ingredient, so it won’t be extremely expensive.
- Try using toasted onion powder in this recipe. It has so much more flavor than the untoasted variety.
- Set aside a few mozzarella pearls, a few halved tomatoes, and a little bit of extra finely chopped basil to garnish the salad.
- This salad will yield 4 servings.
Improvements:
- Replace the fresh mozzarella pearls with crumbled feta.
- If you would like to make this bean salad spicy, replace the honey in this recipe with hot honey or add crushed red pepper flakes.
- Serve this bean salad with these Grilled Lemon Pepper Marinated Chicken Tenders or these Paprika & Oregano Marinated Pork Chops.
- You can use any type of white bean for this recipe. I suggest great northern beans, navy beans, or cannellini beans, however, you could also try using garbanzo beans.
