Growing up in Western Maryland, we never ate sauerkraut straight out of the bag or can. Oh hell no, that would have been a true you’re going straight to hell sin. Sauerkraut was always rinsed and drained first to remove some of its saltiness, and then, sugar was added to it in some shape or form. Sometimes it was brown sugar, sometimes it was diced apple, and sometimes it was both brown sugar and diced apple. The addition of a little crispy bacon was always welcome as well.

To this day, whenever I am served sauerkraut without added sugar or apples, I get sincerely angry. It’s just not a thing that anyone should ever be forced to eat. And for those insane people who even dare to serve sauerkraut without rinsing and draining it first, well now, there’s a very special place in hell waiting for those particular idiots. Chances are, I and my fellow Western Marylanders won’t be saying any prayers for their asses after having their disgusting sauerkraut forced upon us.

Suggestions:

  • Make sure to rinse the sauerkraut to help diminish its saltiness.
  • I always use lager when making sauerkraut and Samuel Adams is usually my go-to brand. Their Oktoberfest, Winter Lager, and Boston Lager always taste great.
  • What do I mean by Whole Grain Mustard? I use Maille Whole Grain Mustard, which has a unique blend of crushed and crunchy mustard seeds. This particular mustard adds lots of texture to a recipe.
  • You can use any type of butter in this recipe; salted or unsalted. I actually used salted Irish Butter. It added a lovely richness to the sauerkraut.
  • Originally, I used 3/4 cup of sugar when making this recipe. Ultimately, I decided that a little bit less sugar tasted better.
