To kick this new group off and start the beginning of the year on the right foot, the first month’s theme chosen by Wendy of A Day in the Life on the Farm is “Healthy Soup Options.” There’s nothing quite like a healthy bowl of soup, especially at this time of year. I know, I know, you are all shaking your heads wondering if the same girl that just wrote that is the one that you have come to know. While there are a lot of cookies, cakes, deviled eggs, and Southern-influenced recipes that come out of my kitchen, there are also a few healthy ones as well. The great thing about a healthy soup is that you can always add things to it for variety.

B.O.B. Bob and I ate this simple yet flavorful soup for several days in a row and each time I added something different to it so that it didn’t get boring. On the first day, we ate this soup as is, with nothing added. On the second day, I added crispy diced ham, finely shredded sharp white cheddar cheese, and roughly chopped peanuts to create this Southern Virginia Sweet Potato Soup, and on the third day, I simply swirled in a spoonful of sour cream before serving. You can pretty much make this soup into anything that you want it to be. Trashed up or plain ol’ Jane, I’m fairly certain that this recipe will win over your heart and your taste buds.

Ingredients:

  • 3 Large Sweet Potatoes, Peeled & Cubed
  • 6 Cups Low-Sodium Chicken Broth
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Unsalted Butter
  • 1 Teaspoon Dried Minced Onion
  • 1 Teaspoon Dried Coarse Cut Celery Flakes or 1 Stalk of Finely Chopped Celery
  • 1/2 Teaspoon Dried Thyme or the Leaves from 5 Fresh Thyme Springs
  • 1/2 Teaspoon Freshly Ground Black Pepper
  • 1/4 Teaspoon Sea Salt
  • 1/8 Teaspoon Ground Chipotle

  1. Place all of the ingredients in a crockpot on low heat for 8 hours.
  2. In several batches, purée the sweet potatoes and liquid in a blender until smooth.
  3. Eat as is, or add your favorite toppings before serving.
