In our house, turkey doesn’t last very long. Mainly because, as of late, it all gets chopped up very finely for the kitty. That’s right, I’m spoiling my little girl rotten. I figure that at sixteen years old, Brenna deserves a little spoiling, don’t you? She certainly agrees. I can’t even open the darn fridge or freezer anymore without her screaming her head off in anticipation of a turkey treat.
And you know what? After boiling down the bones to make broth, and then using a little bit of the leftover turkey to make soup, she’s just as bad. Only instead of standing by the fridge screaming her head off, she sits her furry little butt right beside me screaming her head off, as she watches me eat every single spoonful. Honestly, I may have created a turkey-loving monster.
Ingredients:
- 10 Cups Turkey Stock or Broth
- 1 Cup Turkey, Finely Chopped
- 2 Carrots, Peeled & Diced
- 2 Teaspoons Dried Parsley
- 1/2 Teaspoon Sea Salt
- 1/2 Teaspoon Onion Powder
- 1/4 to 1/2 Teaspoon Crushed Red Pepper Flakes
- 1/4 Teaspoon Finely Ground Black Pepper
- 1 (7-oz.) Package Dried Alphabet Pasta
Directions:
- Place all of the ingredients, except for the pasta, into a large stockpot or Dutch oven over high heat.
- When the soup comes to a rolling boil, add the pasta, and boil for 10 minutes, or until the pasta is cooked through.
Suggestions:
- You can use either chicken or turkey in this recipe. You can also use either chicken or turkey stock or broth.
- To make your own chicken or turkey stock or broth, place a chicken or turkey carcass in a large stockpot filled with water. Bring to a boil over high heat, reduce to low, and then continue to cook for an hour and a half. Strain and refrigerate or freeze until use.
- The amount of crushed red pepper flakes you use will depend on how spicy you like your soup.
- Any small-sized pasta will work well in this recipe. The cooking time may vary depending on the exact size and shape of the pasta.
Improvements:
- Add frozen peas or frozen corn to this soup.
- For a creamier soup, add a 1-cup of heavy whipping cream.
- If you have fresh parsley on hand, use that instead of dried.
