I’ve noticed lately, that I don’t tend to share a lot of quick-cook, no-hassle, throw-it-all-in-one-pot recipes here on the blog. And for the life of me, I can’t figure out why. I mean, I am after all the girl who has been eating pretzels, cheese, olives, hard-boiled eggs, and fresh farmer’s market veggies all summer long. Sure, I may occasionally toss a sausage or hamburger on the grill, however, most days I just stick to the basics. The basics that don’t require cooking.

Well, after making this pasta soup, that may all change. Y’all, I think I’ve found my new go-to weeknight recipe. It only requires seven ingredients, takes twenty minutes to make, and can be cooked in one big pot. Plus, there’s the added bonus that it’s actually two meals in one. If you eat it right away, it’s soup. And, if you let it sit for thirty minutes to cool, it becomes a pasta dish after the noodles absorb the excess liquid.

I’m actually not sure which way I like it best. I think I’m just excited about the fact that I can eat the same meal twice and that it’s different both times. How awesome is that? I’m pretty sure I’ll be making this a lot now that I know how amazing it is. Perhaps I’ll try swapping in some finely diced ham and maybe even a few veggies. After all, it might be kind of nice to eat “real food” a few nights out of the week.

  • 1 (7.05-oz.) Package Broken Spaghetti, Vermicelli, Fideo, or Angel Hair Noodles (Approximately 2 Cups)

  1. Place the soft spreadable cheese, chicken broth or stock, chopped chicken, paprika, salt, and pepper into a large stockpot or Dutch oven. Whisk to combine and then cook for 10 minutes on high heat, whisking often.
  2. Add the broken spaghetti, and cook for 8 to 10 minutes, whisking occasionally, until the pasta is cooked through.
  3. Serve immediately as soup, or allow the mixture to cool for 30 minutes and thicken up to serve as pasta.
  4. Garnish with a sprinkle of paprika or finely ground black pepper.

Suggestions:

  • I used Alouette spreadable cheese in this recipe, however, you can also use Rondelé. Both of these brands can be found in the gourmet cheese section of your local market or grocery store. If you can’t find either of these products, you can also use any type of herb, garlic, or chive-flavored cream cheese spread. If you use cream cheese, cut it into very small cubes before adding it to the soup, which will make it melt into the soup faster.
  • Don’t worry, at first, the cheese will look lumpy in this soup, however, it will melt into the soup as it cooks.
  • If you plan ahead, it’s very easy to make your own chicken broth with the carcass of a rotisserie chicken. After you have pulled all of the meat off of the chicken, place the carcass into a large stockpot, cover it by two inches with cold water, and then bring it to a boil over high heat. When the water comes to a rolling boil, reduce the heat to medium-low and cook for 1 hour. Allow the broth to cool and then remove the bones and strain the broth. Store refrigerated or frozen in an airtight container until use.
  • I recommend using 1/2 teaspoon of kosher salt in this recipe to start. You may need to add more depending on the sodium in the chicken stock or broth you use.
  • You can use spaghetti noodles you have broken yourself for this recipe, or you can use store-bought broken spaghetti, vermicelli, fideo, or angel hair noodles. Adjust the cooking time for the size of the noodles you use.
