What a long week! I was almost beginning to think it would never end. I’ve been outstandingly lazy this week in the kitchen. Thursday was the most productive evening I had, and all I did was throw some Halloumi Cheese on the grill. No oil, no marinade, just cheese. Can I tell you how excited I am that Trader Joe’s now carries it at a price I can actually afford? Super screeching squeal excited! I love me some “squeaky cheese!” I will admit that I prefer it cooked in a pan, over a gas range, but I had no desire to wash any additional dishes. It was enough effort for me to heat up some Naan, chop some Persian Cucumbers, slice some Soppressata, and finally dig some of the World’s Largest Olives out of the bottom of an almost empty jar. We’re talking laaaaazzzzzy! The lazier than Brenna napping on her window perch on a bright sunshiny day kind of lazy. I love summer “little bites” meals. They make life more enjoyable. This was absolutely B.O.B. Bob’s favorite meal of the week, as well as mine, and it took a whole whopping ten minutes to put together. Score!
Ingredients:
- Gas Grill or Gas Range
- Halloumi Cheese, Sliced 1/4-Inch Thick (If you purchase it at Trader Joe’s, it will come pre-sliced. Bonus!)
Directions:
Gas Grill:
- Preheat gas grill to medium-high heat.
- Rinse cheese to remove any brine, and pat dry with a paper towel.
- Grill cheese for a few minutes on each side.
- Scarf down cheese.
Gas Range:
- Preheat a non-stick sauté pan, over medium-high heat.
- Rinse cheese to remove any brine, and pat dry with a paper towel.
- Sauté cheese for a few minutes on each side, or until golden brown.
- Scarf down cheese.
Suggestions:
- Halloumi tastes at its best when sandwiched between two pieces of Naan. Trader Joe’s carries fantastic Garlic Naan Bread in their freezer section.
Improvements:
- Try Coconut Shortbread S’mores with Dark Chocolate and a Touch of Sea Salt for dessert. Heaven!
- Make Trader Joe’s featured “small plates” recipe, Halloumi and Watermelon Balsamic Bites, one night for dinner in place of a heavy meal. Remember, a light meal equals dessert without the guilt. S’mores!
