Over the last month, I’ve made a lot of recipes using this Sweet & Spicy Cranberry Jalapeño Jam Sauce. I started with Warm Cranberry & Jalapeño Sweet Potato Salad and then moved on to Bacon-Wrapped Cranberry Jalapeño Crackers followed by Crockpot Cranberry Jalapeño Swedish Meatballs. And then there were a few sweets that showed up in my kitchen as well, including this Fresh Blueberry Streusel Topped Crumb Cake and these Milk Chocolate Sour Cream Cake Brownies. Heck, there were even Creamy Horseradish Grilled Shrimp Deviled Eggs y’all. None of these were my favorite. I know, I know, not even the deviled eggs. How is that even possible? Well, it’s possible because of these Salt & Pepper Horseradish Roast Beef Biscuits.
Y’all, this is one bite of biscuit heaven you really need to try. Just imagine flakey, buttery, salt and pepper biscuits. Not good enough? Now slather those same biscuits with a creamy homemade horseradish sauce. Still not good enough? Well then, heap on a generous amount of thinly sliced roast beef lunch meat and a juicy slice of fresh summer garden tomato. Now we’re talking, right? And the best thing about this recipe is that you can totally make it in under 30 minutes. Yes, that’s right, 30 minutes. There’s really just no excuse not to make these lil’ guys.

Ingredients:
- 2 1/4 Cups All-Purpose Flour
- 4 Tablespoons Baking Powder
- 2 Tablespoon Granulated Sugar
- 1 Teaspoon Ground Sea Salt
- 1/2 Teaspoon Ground Black Pepper
- 1/2 Cup Unsalted Butter, Cut into Small Pieces
- 1 Cup Whole Milk
- 3 Tablespoons Unsalted Butter, Melted
- Ground Black Pepper
- 1/2 Cup Sour Cream
- 1/2 Cup Mayonnaise
- 2 Tablespoons Creamy Horseradish
- 1/4 Teaspoon Ground Sea Salt
- 1/4 Teaspoon Ground Black Pepper
- Deli Roast Beef
- Tomato Slices
Directions:
- Preheat oven to 450 degrees.
- In a large bowl, whisk together the flour, baking powder, sugar, salt, and pepper.
- Add in the small pieces of butter and cut them into the flour for 2 minutes using a fork or pastry cutter.
- Add the milk and stir until the dough just comes together.
- Use your hands to fold the dough over on itself approximately 20 times, or just until all of the flour has been absorbed into the dough.
- Pat the dough down into a 3/4-inch thickness on a flour-covered counter. Cut biscuits out of the dough using a glass, biscuit cutter, or cookie cutter. Place the biscuits onto a Silpat or parchment paper-lined baking sheet. Roll up the remaining dough leftovers, pat them down again, and cut as many biscuits out as you can. Repeat this process until all of the dough is gone.
- Bake for 7 to 10 minutes, or until lightly browned.
- Brush immediately with the melted butter and sprinkle with a bit of ground black pepper.
- Whisk all of the ingredients together in a small bowl.
- Cut each biscuit in half and spread a bit of the horseradish sauce on the inside of each half.
- Top the bottom half of each biscuit with a few slices of deli roast beef and a slice of tomato before topping with the top of each biscuit.
