What can you NOT expect to find in this biscuit recipe? Well y’all, you will NOT, I promise, at any point, be given instructions to rub the butter into the flour mixture using your fingers. And, once again, DO NOT, I repeat, DO NOT rub the butter into the flour mixture with your fingers. Use a pastry cutter, fork, or even a knife, but for the love of all that is holy, not your fingers.

  3. Cut the cold butter into very small pieces and add it to the flour mixture. Use a pastry cutter, fork, or knife to cut the butter into the flour mixture for approximately 2 minutes.
  4. Pour the milk into the flour and butter mixture. Use a silicone spatula to stir the mixture until just combined.
  5. Liberally flour your hands and the countertop you are working on. Dump the dough out onto the floured countertop and fold it over on itself approximately 10 to 12 times, working the flour into the dough.
  6. Evenly pat the dough down to a height of 1 inch with the palms of your hands. Use a 2 1/2-inch round cookie cutter or a glass drinking glass to cut out biscuits and place them on a Silpat or parchment paper-lined baking sheet. Re-roll any scraps and repeat these steps until there is no longer any dough.
  7. Bake for 12 minutes, or until the biscuits are puffed, light golden brown, and cooked through.
  8. Brush the biscuits with the melted butter immediately after you remove them from the oven.

  • I used Trader Joe’s Everything But the Bagel Sesame Seasoning Blend for this recipe. You can use any store-bought variety of everything bagel seasoning or make your own with sesame seeds, dried minced garlic, black sesame seeds, dried minced onion, poppy seeds, and sea salt.
  • Do not add any additional salt to these biscuits because the seasoning mix already contains a pretty good amount.
  • You can make these biscuits smaller or larger if you choose, however, you will have to decrease or increase the baking time.
  • Dip your biscuit cutter or drinking glass into flour before attempting to cut out the biscuits. Press straight down when cutting biscuits; do not twist. If you twist, your biscuits will not be as fluffy.
  • Don’t be afraid to work more flour into the dough as you fold it over on itself on the countertop. I typically cover my countertop with 1/4 cup of flour and put a little extra off on the side in case I need additional.
  • You want to make sure not to overwork your biscuit dough. The flakiness of the biscuits will decrease if you handle the dough too much. Fold the dough over on itself approximately 10 to 12 times.
  • This recipe will yield approximately 12 biscuits. The number of biscuits will depend on the size you make them.
