So, I’ve been holding off on the whole avocado toast craze that has been all over Pinterest. I like toast, because let’s just face it, who doesn’t? I like avocado, especially when it’s nicely salted, but those two foods together never brought happy-go-lucky images to my mind. Not like the image of fried chicken and waffles. MMMmmmMMMmmm…fried chicken and waffles. Sorry, I got off track there. My point is this, avocado and toast together, well it’s a good thing, dare I even say it’s a great thing, especially when it’s covered with melted cheese.
Ingredients:
- 2 Thick Slices of Bread
- 1 Avocado, Sliced
- 2 Slices of Your Favorite Cheese
- Sea Salt
- Freshly Ground Black Pepper
Directions:
- Preheat oven to 350 degrees.
- Cover a baking sheet with a piece of foil.
- Place the bread slices on top of the foil, and then layer the avocado on top of the toast, followed by the cheese.
- Bake for 10 minutes, or until the cheese is bubbly and the bread is golden.
- Sprinkle with salt and pepper before serving.
Suggestions:
- Use Gouda. I’m totally addicted to the Gouda that I brought home from our trip to Price Edward Island from Glasgow Glen Farm. It was totally worth the trouble of buying or acquiring ice for the cooler each day. There is nothing wrong with traveling with a cooler filled with nothing but cheese. Anyone can have a cooler of beer, but true happiness is a cooler of cheese.
Improvements:
- Sprinkle with ground chipotle.
- Crumble bacon over the cheese.
