  • 1 Cup Sweet Tea Vodka
  • 1 (32-oz.) Carton Low-Sodium Chicken Broth
  • 2 Small Zucchini, Diced
  • 1 Tablespoon Spicy Brown Mustard
  • 2 Teaspoon Herbes de Provence
  • 1/2 Teaspoon Finely Ground Sea Salt
  • 1/2 Teaspoon Finely Ground Black Pepper
  • 1/4 Teaspoon Crushed Red Pepper Flakes
  • 1/4 Cup to 1/2 Cup Moroccan Couscous (See Below)
  • Zest of 1 Lemon
  • Honey or Hot Honey

  1. Place the olive oil, fennel, carrots, and onion in a large Dutch oven or pot over medium heat. Sauté for 5 minutes, stirring often.
  2. Carefully add the sweet tea vodka. Cook for 3 minutes, stirring often.
  3. Add the broth, zucchini, mustard, Herbes de Provence, salt, black pepper, and crushed red pepper flakes. Increase the heat to high and bring to a rolling boil.
  4. When the soup is boiling, add the couscous and decrease the heat to low. Cook for 10 minutes, stirring occasionally.
  5. Garnish each bowl of soup with a sprinkle of lemon zest and a drizzle of honey or hot honey.

Suggestions:

  • Depending on where you purchase your fennel, it may or may not have the stalks and fronds attached. Unfortunately, mine had already had the stalks removed, and there were very few fennel fronds attached to the bulbs. If yours does have some attached, feel free to finely chop them up and use them to garnish this soup.
  • To dice the fennel, slice the stem end off each fennel bulb and set it aside. Cut each fennel bulb into approximately 1/4-inch slices, starting from the stem end. Lay each slice flat and dice each slice into small squares. When you get to the bottom of each fennel bulb, remove or cut out the large hard core of each slice before dicing it. Discard the hard core pieces and the very bottom slice of each fennel bulb.
  • Trader Joe’s sells fennel bulbs for a very affordable price. They come two to a package. The only downside is that their stalks and fronds have been removed. Keep an eye out for fennel at your local farmer’s market. It can be fairly affordable when it is in season.
  • I used Firefly Sweet Tea Vodka for this soup. If you don’t want to use vodka, replace it with sweet tea, apple cider, or additional low-sodium chicken broth.
  • If you like more broth in your soup, use 1/4 cup of couscous. If you prefer a thicker soup, use 1/2 cup of couscous.
  • I used Moroccan couscous for this recipe. If you use Israeli couscous for this recipe, you will need to add a bit more cooking time, since it is larger. You can replace the couscous with any variety of small-shaped pasta, such as pastina or orzo. Cooking times may vary slightly. Cook the pasta until it is tender.
