How is it that four peaches can be sitting on your countertop one day, completely hard and nowhere near ripening, and then the next day the same four peaches have suddenly decided that they will all become overly ripe at the same time? Sigh. Fruit sucks. It has a mind of its own, and could care less if you are actually in the mood to eat it. You are a slave to its ripening whims, and will thus be forced to eat four peaches all at one time, causing one hell of a tummy ache.
Ingredients:
- 1/2 Fresh Peach, without Skin
- 1 Teaspoon Dijon Mustard
- 2 Tablespoons Extra Virgin Olive Oil
- 1/4 Teaspoon Freshly Ground Black Pepper
Directions:
- Place all ingredients in a food processor, and puree until completely smooth.
Suggestions:
- Serve over baby spinach with additional fresh peach slices.
- Sprinkle salad with chopped chives.
Improvements:
- Add a teaspoon of chopped shallot to the dressing before blending.
- Add a few dashes of hot sauce, or a small amount of diced jalapeño.
