<p class="p1"><span class="s1">Today I’ll be sharing a little quirky insight as to how I shop, using these wee little cherry cookies as an example. Buckle up, it’s about to get real in here. After seeing a cherry cordial recipe this week, I was inspired to make a thumbprint cookie using Kirschwasser, which is a clear cherry brandy produced in Germany. So, as is often the case with any recipe requiring hard liquor, I found myself, once again, driving to the ABC store. Only this time, it wasn’t because B.O.B. Bob had somehow, once again, miraculously finished an entire bottle of the Jameson, Jack, Four Roses, or Baileys that I always try to keep on hand for cooking and baking. I swear, I really need to put a line on the bottle that states, “If you drink past here, you better get your ass to the store and purchase a new bottle, or Colleen is gonna be rip-roaring pissed off!”</span></p>
<p class="p1"><span class="s1">Anyway, back to the shopping. At the store, I was saddened to find only one brand of Kirschwasser available. And, since I had already done my research online, I realized that this particular $11.99 bottle of alcohol was not something anyone would actually want to drink unless they were underage and searching in the back of a dusty pantry for something to sip without their parents ever finding out. So, when that plan went out the window, I decided to look at other cherry liqueurs. There were two options that I deemed worthy of purchase, a $31.99 bottle of Heering Cherry Liqueur and a $34.99 bottle of Luxardo Maraschino. So there I stood, with a bottle in each hand. Putting one back and then picking it up again. Putting one back and then picking it up again. Putting one back and then picking it up again. Until, finally, I said to heck with it, I’m just gonna get the Heering Cherry Liqueur and be done with it.</span></p>
<p class="p1"><span class="s1">Now, this is when a normal person would walk to the register, say, “Howdy. How’s your day going?” and then head home to bake some freaking cookies. But no, I am not normal. I proceed to walk around the store oohing and aahing over alcohol that I would never even dare drink. And, while doing this, I somehow managed to pick up two bottles of whiskey for Christmas gifts, one bottle of fancy scotch for a birthday gift, and several mini bottles to use as stocking stuffers. Y’all, all I needed was one wee bottle of liqueur that should have cost me about $35. But no, instead I left that store having spent almost $200. This is how I shop. It’s a skill I have perfected, or should I say an extremely bad and somewhat expensive habit? Anyway, thanks to my recent ABC shopping spree, I now present to you, a batch of adorable, but extremely costly, Christmas cookies. Enjoy.</span></p>

<li>2 Cups All-Purpose Flour</li>
</ul>

<p><strong>Directions:</strong></p>
<p><strong>Cookies:</strong></p>
<ol>
<li>In a large mixing bowl, cream the butter and sugar on medium speed for 2 minutes.</li>
<li>Add the cherry liqueur, vanilla, and salt; mix for 1 minute on medium speed.</li>
<li>Add the flour a cup at a time, on low speed; mix just until incorporated.</li>
<li>Cover and chill for 1 hour, or until the dough is easy to handle.</li>
<li>Preheat the oven to 350 degrees.</li>
<li>Shape the dough into 1-inch balls. Place the balls 2 inches apart on a Silpat or parchment paper-lined baking sheet.</li>
<li>Bake for 12 to 14 minutes, or until the cookies are puffed, cooked through, and just starting to turn a light golden brown on the bottom edges.</li>
<li>Immediately use the back of a round measuring teaspoon to press an indentation into the center of each cookie.</li>
<li>Allow the cookies to cool for 3 minutes before removing them to a wire rack to finish cooling completely.</li>
</ol>
<p><strong>Filling:</strong></p>
<ol>
<li>Drain the maraschino cherries. Reserve the juice for another recipe or discard it. Use a few paper towels to help dry the cherries off a bit. Finely chop the cherries. Place the chopped cherries on another few sheets of paper towel to dry a bit more.</li>
<li>After the cookies have completely cooled, sift the powdered sugar into a small bowl. Add the cherry liqueur and half and half. Whisk until smooth.</li>
<li>Spoon the filling into the well of each cookie. Garnish with the chopped cherries.</li>
<li>Allow the cookies to sit for several hours before packaging them in an airtight container.</li>

<p><strong>Suggestions:</strong></p>
<ul>
<li>I used Herring Cherry Liqueur for this recipe. If you don’t have cherry liqueur or you want to keep these cookies alcohol-free, replace the liqueur with maraschino cherry juice.</li>
<li>It’s easy to forget how big or small an inch is. I keep a metal ruler in my kitchen for just such occasions. I rest it on the counter in an area where I can see it while shaping the cookies. It’s a good reminder and helps me keep the cookies the correct size. Without the ruler, I tend to roll larger balls of dough.</li>
<li>Do not use your thumb to press an indentation into the cookies because they will be extremely hot. If you don’t have a round teaspoon, try using a cookie or tart tamper, or even a cocktail muddler.</li>
<li>I used a jar of maraschino cherries which I purchased at Target. I feel like they taste better than others I have found in my local markets. If your jar of cherries is larger, you will need approximately 24 to 28 cherries for these cookies, depending on their size.</li>
<li>Don’t forget to sift your powdered sugar so that your filling is smooth and lump-free.</li>
<li>I used half and half in the icing because it is what I had on hand. You can also use milk or heavy whipping cream. If you use milk, you may need a bit less than 2 tablespoons. If you use heavy whipping cream, you may need a bit more than two tablespoons.</li>
<li>When storing the cookies, place a piece of waxed paper between each layer of cookies to prevent the cookies from sticking to one another.</li>
<li>If I am not serving all of these cookies within a few days, I store them in a refrigerator because of the dairy used in the icing.</li>
<li>This recipe will yield approximately 2 1/2 to 3 dozen cookies depending on how large or small you roll your cookie dough.</li>

</li><li id="yrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Add the cherry liqueur, vanilla, and salt; mix for 1 minute on medium speed.
</li><li id="yrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Add the flour a cup at a time, on low speed; mix just until incorporated.
</li><li id="yrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Cover and chill for 1 hour, or until the dough is easy to handle.
</li><li id="yrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Preheat the oven to 350 degrees.
</li><li id="yrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Shape the dough into 1-inch balls. Place the balls 2 inches apart on a Silpat or parchment paper-lined baking sheet.
</li><li id="yrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Bake for 12 to 14 minutes, or until the cookies are puffed, cooked through, and just starting to turn a light golden brown on the bottom edges.
</li><li id="yrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Immediately use the back of a round measuring teaspoon to press an indentation into the center of each cookie.
</li><li id="yrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Allow the cookies to cool for 3 minutes before removing them to a wire rack to finish cooling completely.

</div><li id="yrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Drain the maraschino cherries. Reserve the juice for another recipe or discard it. Use a few paper towels to help dry the cherries off a bit. Finely chop the cherries. Place the chopped cherries on another few sheets of paper towel to dry a bit more.
</li><li id="yrecipe-instruction-12" class="instruction" itemprop="recipeInstructions">After the cookies have completely cooled, sift the powdered sugar into a small bowl. Add the cherry liqueur and half and half. Whisk until smooth.

<p>I was never the child who willingly asked for a peanut butter and jelly sandwich. Never. Peanut butter was just not my jam, no pun intended, and to this day, it still isn’t. Unlike B.O.B. Bob, who can often be tempted by any lil’ sweet treat containing peanut butter, I save my calories for desserts like crème brûlée, pie, or anything made out of puffed pastry. So for this month’s “PB&J” themed Fantastical Food Fight, I knew that one of us would be thrilled beyond belief and one of us would be like, “Meh.” Perhaps that’s a good thing. Having six-dozen “meh” cookies in your house isn’t such a bad thing when you’re attempting to eat healthier and “de-fluff.” It’s probably not such a great thing for B.O.B. Bob’s waistline, but that’s his problem, not mine.</p>

<p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 350 degrees.</li>
<li>Mix the bananas, peanut butter, butter, brown sugar, granulated sugar, eggs, and vanilla on medium speed for 3 minutes.</li>
<li>In a medium bowl, sift together the flour, baking soda, and salt. On low speed, slowly add the flour mixture to the butter mixture until just combined.</li>
<li>Fold the oats into the batter with a silicone spatula.</li>
<li>Use a cookie scoop to measure out an even amount of dough, roll it into a ball, and then place it on a Silpat or parchment paper-lined baking sheet. Make a well in the middle of each cookie with your thumb and fill each well with jam, jelly, or preserves.</li>
<li>Bake for 8 to 10 minutes, or until golden brown and cooked through.</li>
<li>Allow the cookies to rest for 3 minutes on the cookie sheet before removing them to a baking rack to finish cooling completely.</li>
<li>Microwave the peanut butter chips and vegetable shortening in a small bowl for 30 seconds. Stir and then microwave/stir for 15-second intervals until completely smooth. Drizzle each thumbprint cookie with a bit of the peanut butter mixture and then immediately garnish with a sprinkle of chopped peanuts.</li>
<li>Allow to rest for 1 hour before packaging in an airtight container between layers of wax paper.</li>

<li>Preserves work best in this recipe. They have a thicker consistency which does not get runny when baked.</li>
<li>Do not use natural peanut butter in this recipe, it has a higher oil content.</li>
<li>This recipe will make at least 6 dozen cookies. If you would like to make less, cut the recipe in half.</li>
<li>These cookies are not overly sweet; if you would like to make them sweeter, roll each ball of cookie dough in granulated sugar before making a well for the jam, jelly, or preserves.</li>

</li><li id="yrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Mix the bananas, peanut butter, butter, brown sugar, granulated sugar, eggs, and vanilla on medium speed for 3 minutes.
</li><li id="yrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">In a medium bowl, sift together the flour, baking soda, and salt. On low speed, slowly add the flour mixture to the butter mixture until just combined.

</li><li id="yrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Use a cookie scoop to measure out an even amount of dough, roll it into a ball, and then place it on a Silpat or parchment paper-lined baking sheet. Make a well in the middle of each cookie with your thumb and fill each well with jam, jelly, or preserves.
</li><li id="yrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Bake for 8 to 10 minutes, or until golden brown and cooked through.
</li><li id="yrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Allow the cookies to rest for 3 minutes on the cookie sheet before removing them to a baking rack to finish cooling completely.
</li><li id="yrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Microwave the peanut butter chips and vegetable shortening in a small bowl for 30 seconds. Stir and then microwave/stir for 15-second intervals until completely smooth. Drizzle each thumbprint cookie with a bit of the peanut butter mixture and then immediately garnish with a sprinkle of chopped peanuts.

<p>I surprisingly managed not to burn these cookies when I dropped everything in the kitchen to take pictures of Brenna with her visiting little squirrel friend. Brenna lets me know when there is a creature outside of the window by chirping, that’s right I said chirping. It’s the most interesting sound, somewhere between a bird’s chirp and a cricket rubbing its legs together; and she only makes that particular sound when she sees another animal or insect. It’s a lot easier for me to bake cookies when she’s occupied with something else besides me.</p>
<p>I know y’all must be getting tired of seeing cookies; I know I am. It’s Christmas though, and what better time to bake cookies? It’s the one time of the year when calories don’t count, or at least we tell ourselves that they don’t. The downside is that I seem to be spending most of my time in the kitchen, instead of enjoying the holiday season with friends and family. At the very least, Brenna helps to make it interesting.</p>

<li>1/2 (13-oz.) Jar of Cherry Preserves (Bonne Maman)</li>
<li>1/4 Cup Sliced Almonds</li>

<p><strong>Decorating:</strong></p>

<li>3/4 Cup White Morsels</li>
<li>1 Tablespoon Crisco</li>
<li>1/2 Teaspoon Ground Cinnamon</li>

<li>Preheat oven to 350 degrees.</li>
<li>Cream the butter and sugars together for 2 minutes, on medium speed.</li>
<li>Add vanilla; mix for 30 seconds, on medium speed.</li>
<li>Add salt; mix for 30 seconds, on medium speed.</li>
<li>Add the flour half a cup at a time, on low speed; mix just until incorporated.</li>
<li>Shape dough into 1-inch balls. Place the balls 2 inches apart on a Silpat or parchment paper-lined baking sheet. Using your thumb, press an indentation into the center of each ball. Spoon the preserves into the indentation of each cookie; top with almonds.</li>
<li>Bake for 10 to 12 minutes, or until the edges are lightly browned.</li>
<li>Allow the cookies to cool for 3 minutes, before removing them to a wire cooling rack to finish cooling completely.</li>
</ol>
<p><strong>Decorating:</strong></p>

<li>Microwave the white morsels with Crisco in a small bowl for 1 minute, stir the mixture then microwave for 15-second intervals until melted; stirring in between each interval.</li>
<li>Add the cinnamon and mix well.</li>
<li>Drizzle the mixture over the cooled cookies with the tines of a fork or a plastic decorating squeeze bottle; allow the cookies to set for two hours.</li>
<li>Store the cookies in an airtight container.</li>

<p>Brenna even got in on the baking action. I had a chair sitting in the kitchen, and she just hopped right on up and watched everything I was doing. Dear sweet Brenna just had her yearly checkup this weekend, and I’m sad to report that it did not go well. I don’t mean to say that she is not healthy, because she is doing absolutely amazing for being ten years of age; but she lulled the vet and technicians into a false sense of security, only to shock the hell out of them when she had suffered enough of their attention. Drawing blood and getting a urinalysis is not so easy when you have an uncooperative kitty cat, and Brenna did her best to show them who was boss. So, no urinalysis yet again this year, so we’re just going to have to hope that there’s nothing wrong in that department for the second year in a row. Hopefully, she’ll forgive me enough to be my little “helper” tomorrow when I whip up another batch of these cookies.</p>

<p><strong>Directions:</strong></p>
<p><strong>Cookies:</strong></p>
<ol>
<li>In a large mixing bowl, cream the butter and sugar on medium speed for 2 minutes.</li>
<li>Add the vanilla and mix for 30 seconds on medium speed.</li>
<li>Add the flour half a cup at a time, on low speed; mix just until incorporated.</li>
<li>Cover and chill for 1 hour, or until the dough is easy to handle.</li>
<li>Preheat the oven to 350 degrees.</li>
<li>Shape the dough into 1-inch balls. Place the balls 2 inches apart on a Silpat or parchment paper-lined baking sheet.</li>
<li>Using your thumb, press an indentation into the center of each ball. Spoon preserves into the indentation of each cookie.</li>
<li>Bake for 11 to 14 minutes, or until the edges are light brown.</li>
<li>Allow the cookies to cool for 3 minutes before removing them to a wire rack to finish cooling completely.</li>

<p><strong>Glaze:</strong></p>

<li>After the cookies have completely cooled, mix all of the glaze ingredients in a small bowl. Drizzle the glaze onto the cooled cookies.</li>
<li>Allow the cookies to sit for several hours before packaging them in an airtight container.</li>

<li>I originally used Smucker’s Orchard’s Finest Lakeside Raspberry Cranberry Preserves for this recipe, however, it has been discontinued. You can use any brand or variety of mixed berry jam, jelly, or preserves in this recipe.</li>
<li>Drizzle the glaze onto the cookies with the tines of a fork.</li>
<li>If your glaze is too thick to drizzle, add another teaspoon of water.</li>
<li>When storing the cookies, place a piece of waxed paper between each layer of cookies to prevent the cookies from sticking to one another.</li>
<li>This recipe will yield approximately 2 1/2 to 3 dozen cookies.</li>

</li><li id="yrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Preheat the oven to 350 degrees.
</li><li id="yrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Shape the dough into 1-inch balls. Place the balls 2 inches apart on a Silpat or parchment paper-lined baking sheet.
</li><li id="yrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Using your thumb, press an indentation into the center of each ball. Spoon preserves into the indentation of each cookie.
</li><li id="yrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Bake for 11 to 14 minutes, or until the edges are light brown.
</li><li id="yrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Allow the cookies to cool for 3 minutes before removing them to a wire rack to finish cooling completely.
