<p>As a child, I can only remember a few varieties of soup being served in our household. The most popular, and most often served, was <a href="http://faithhopeloveandlucksurvivedespiteawhiskeredaccomplice.com/classic-childhood-vegetable-soup-soupswappers/" target="_blank" rel="noopener noreferrer"><span style="color: #ff715b;"><strong>vegetable soup</strong></span></a>. However, occasionally we would have a bowl of ham and bean soup, chicken noodle soup, or clam chowder. Every so often, my mom would also make oyster stew, which I can only remember eating because the oysters were pulverized beyond recognition. And then, there was that one time when we were forced to eat potato soup on Father&#8217;s Day because someone added way too much milk to the mashed potatoes.</p>
<p>Basically, when it came to soup, my family was not very adventurous. However, as I grew older and began to eat at friend&#8217;s homes, I began to discover that there were so many other varieties of soup out there in the world. And, my absolute favorite, without a doubt, was chicken alphabet soup. Straight out of the can with no water added. After all, why would one want to water down a good thing? Heck, for that matter, why even bother warming the soup up? Room temperature, straight from the can. To me, that was absolute soup perfection.</p>

<p><strong>Directions:</strong></p>
<p><strong>Homemade Rotisserie Chicken Broth:</strong></p>
<ol>
<li>Remove the skin from the rotisserie chicken and place it into a large stockpot. Remove the white breast meat and set it aside. Remove all of the dark meat from the legs and thighs, removing any excess fat or skin. Place all of the fat, skin, and bones into the large stockpot. Save the white breast meat for another recipe. Chop or shred the dark meat for this recipe. An average-sized rotisserie chicken should yield approximately 1 1/2-cups of dark meat chicken. Refrigerate the chicken until use.</li>
<li>Fill the stockpot containing the fat, skin, and bones with cold water and bring it to a boil over high heat.</li>
<li>When the pot comes to a rolling boil, reduce the heat to low and then cook for 1 hour.</li>
<li>Use a slotted spoon to remove the bones and any large pieces of skin from the stockpot. Strain the broth through a fine-mesh strainer to get rid of any residual bones or skin.</li>
</ol>
<p><strong>Alphabet Soup:</strong></p>
<ol>
<li>Place all of the ingredients, except for the chicken and pasta, into a large stockpot.</li>
<li>Bring to a boil over high heat.</li>
<li>Lower the heat to medium and cook for 30 minutes.</li>
<li>Add the chopped or shredded dark meat chicken; cook for 5 minutes.</li>
<li>Add the pasta; cook until soft and tender.</li>
</ol>

<p><strong>Suggestions:</strong></p>
<ul>
<li>The unused white breast meat from the rotisserie chicken can be used in another recipe or to make chicken salad.</li>
<li>You will need at least 16 to 20 cups of homemade broth for this soup. If you find that you have less broth after boiling down the fat, skin, and bones, you can always add additional water.</li>
<li>I prefer my alphabet soup to include lots of pasta, so I always add the entire bag of dried alphabet pasta shapes. However, this means that there is very little broth in the soup because it is absorbed by the pasta. If you prefer your soup to have more broth, add more broth, more water, or less pasta.</li>
<li>You can replace the alphabet pasta in this recipe with any type of pasta you choose.</li>

</div><li id="yrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Remove the skin from the rotisserie chicken and place it into a large stockpot. Remove the white breast meat and set it aside. Remove all of the dark meat from the legs and thighs, removing any excess fat or skin. Place all of the fat, skin, and bones into the large stockpot. Save the white breast meat for another recipe. Chop or shred the dark meat for this recipe. An average-sized rotisserie chicken should yield approximately 1 1/2-cups of dark meat chicken. Refrigerate the chicken until use.

<p>I&#8217;m going to be totally honest with y&#8217;all today and admit that I made this soup over half a year ago, probably sometime right after Easter. You know, at the beginning of the pandemic, when I was digging through my pantry to come up with new recipe ideas and forcing myself to use every scrap of food in the house to its fullest potential. There was absolutely no way in hell that I was going to throw out a perfectly good ham bone, not to mention a hairy carrot or two. Nope, I was going to use those outcast ingredients to make a deliciously creamy soup instead.</p>
<p>So, why exactly, am I all of a sudden sharing this recipe with y&#8217;all today? Well, I guess more than anything, it&#8217;s as a reminder for you to save your upcoming holiday ham bones or turkey bones. Don&#8217;t just throw those suckers in the trash. Toss &#8217;em in a pot, cover them with water, and let them simmer for a few hours. Then, you can use that delicious and absolutely free stock or broth to make whatever kind of soup you want. Me personally, I&#8217;m kind of hoping that you choose to make this one. You won&#8217;t regret it.</p>

<li>4 Cups Ham Stock</li>
<li>1 Cup Red Lentils, Rinsed &amp; Drained</li>
<li>2 Large Carrots, Peeled &amp; Diced</li>
<li>1 Sweet Potato, Peeled &amp; Diced</li>
<li>1 Tablespoon Whole Grain Mustard</li>
<li>2 Teaspoons Herbes de Provence</li>
<li>1 Teaspoon Hot Sauce</li>
<li>1/4 Teaspoon Freshly Ground Black Pepper</li>
<li>1 Cup Heavy Whipping Cream</li>
<li>1/4 to 1/2 Teaspoon Kosher Salt</li>

<p><strong>Directions:</strong></p>
<ol>
<li>Place the olive oil in a large pot over medium-high heat.</li>
<li>When the oil is hot, add the onion and sauté for 5 to 8 minutes, or until softened, stirring often.</li>
<li>Add garlic; sauté for 1 minute, stirring constantly.</li>
<li>Add sherry; cook for 2 minutes, stirring constantly.</li>
<li>Add stock, red lentils, carrots, sweet potato, mustard, Herbes de Provence, hot sauce, and black pepper. Stir to combine and allow to come to a boil.</li>
<li>Decrease the heat to low, cover, and cook for 30 minutes, or until the carrots and sweet potato are softened.</li>
<li>Add the cream and allow to cook for 5 additional minutes.</li>
<li>Add salt to taste.</li>

<p><strong>Suggestions:</strong></p>
<ul>
<li>For this soup, I used homemade ham stock made from spiral-cut glazed ham. If you are using ham stock from a plain ham, you may want to add a pinch of ground cloves, a pinch of ground cinnamon, and 1 tablespoon of brown sugar.</li>

<p>My favorite recipe for the month of April even managed to surprise me, especially since I shared so many lovely salad recipes including this <a href="http://faithhopeloveandlucksurvivedespiteawhiskeredaccomplice.com/creamy-roasted-asparagus-pea-salad/" target="_blank" rel="noopener"><span style="color: #ff715b;"><strong>Creamy Roasted Asparagus &amp; Pea Salad</strong></span></a> and this <a href="http://faithhopeloveandlucksurvivedespiteawhiskeredaccomplice.com/toasted-goat-cheese-pecan-salad/" target="_blank" rel="noopener"><span style="color: #ff715b;"><strong>Toasted Goat Cheese &amp; Pecan Salad</strong></span></a>. I mean y&#8217;all, come on, I love me some trashed up salads, and these two fit the bill perfectly. But nope, neither one of those recipes was my favorite.</p>
<p>Shockingly, my favorite recipe was this <a href="http://faithhopeloveandlucksurvivedespiteawhiskeredaccomplice.com/french-cream-of-carrot-soup/" target="_blank" rel="noopener"><span style="color: #ff715b;"><strong>French Cream of Carrot Soup</strong></span></a>. I&#8217;m not sure how I&#8217;ve made it this far in life never having tried carrot soup before. Let me just tell you, if you haven&#8217;t tried it yet, you simply must. It&#8217;s a life changer. And, it also takes very few ingredients to make, which is pretty great when you&#8217;re like me and only have frozen chicken stock and a bag of carrots on hand.</p>
<p>Do you want to know what&#8217;s even better? All three of the recipes above would be perfect for a Mother&#8217;s Day lunch. I mean, really y&#8217;all, what mother wouldn&#8217;t love a nice warm bowl of soup with a scrumptious little salad served to her on the big day? I know I would. Too bad Brenna doesn&#8217;t have thumbs and would most likely burn the kitchen down in the process of making it for me.</p>

</li><li id="yrecipe-ingredient-7" class="ingredient" itemprop="ingredients">Fresh Chives, Finely Chopped</li></ul><p id="yrecipe-instructions" class="h-4 strong">Directions:</p><ol id="yrecipe-instructions-list" class="instructions"><li id="yrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Place the sliced carrots, chicken stock, Herbs de Provence, pepper, and salt into a large stockpot or Dutch oven. Bring to a boil and then lower the heat to medium and cover. Cook for 45 minutes, stirring occasionally.

<p>Apparently, spring has sprung. However, I&#8217;m not sure if you&#8217;d know that from looking at our pathetically empty garden. The only thing actually growing in it right now is rhubarb, which I still have yet to pick due to procrastination. Usually, by this time of the year, we&#8217;ve planted a crazy amount of tomato plants, lettuce, green beans, peas, cucumbers, and carrots, all of which may or may not successfully grow at some point by summer. However, this year has still been way too cold to justify putting in a garden only to see it freeze right after planting it. I guess we&#8217;ll just have to wait a few weeks and hope that the weather eventually catches on and realizes what time of year it is. In the meantime, I guess it can&#8217;t hurt to enjoy the seemingly endless chilly days with a bowl of warm comforting soup.</p>
