When you can’t decide between an oatmeal cookie, a chocolate fudge brownie, or a handful of M&M’s, bake up a batch of these Chocolate Fudge Brownie Oatmeal M&M Cookies. You can satisfy all of your cravings with one rich, delicious, and super-chocolatey cookie and spread a little bit of seasonal cheer with the addition of festive holiday M&M’s.
As children, my brother Matt and I would often share a bag of M&M’s. Of course, being the odd little children that we were, we had our own unique system of fairness when it came to sharing. The bag would be ripped open, the colors would be split into separate piles, and then we would take turns picking which color M&M we each wanted until all of the M&M’s were gone. If there was an odd number of M&M’s we would try and remember who had been the person to get the extra M&M from the last bag of M&M’s we had shared. Obviously, to almost no one’s surprise, this is usually when a full-on war would break out because neither of us would ever admit that we had been the one to receive the extra M&M the last go-around.
Years later, I still find myself sorting through bags of M&M’s, separating them into individual piles by color, and storing them away for use in holiday recipes. Sure, M&M’s are pretty much always available for sale in festive holiday colors, however, the bags on sale in the stores don’t always match up to what holiday or occasion I plan on baking for. Thus the sorting. Hopefully, if all goes well, you won’t have the same problem because you’ll actually make these cookies during the holiday season when almost every store will carry red and green M&M’s. P.S. Don’t be afraid to buy an extra bag or two. If you don’t use them for Christmas, you can always sort them out and use the red ones for Valentine’s Day and the green ones for St. Patrick’s Day.
Ingredients:
- 1/2 Cup Unsalted Butter, Softened
- 3/4 Cup Granulated Sugar
- 3/4 Cup Light Brown Sugar, Packed
- 2 Eggs
- 2 Tablespoons Heavy Whipping Cream
- 1 Tablespoon Vanilla
- 1 1/4 Cups All-Purpose Flour
- 3/4 Cup Unsweetened Cocoa Powder
- 2 Tablespoons Cornstarch
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Kosher Salt
- 2 Cups Quick-Cooking Oats
- 1 (10-oz.) Bag Dark Chocolate Chips (Divided)
- Red & Green M&M’s
Directions:
- In a large mixing bowl, cream the butter and sugars together for 2 minutes on medium speed.
- Add one egg; mix for 30 seconds on medium speed. Add the second egg; mix for 30 seconds on medium speed.
- Add the heavy whipping cream and vanilla; mix for 30 seconds on medium speed.
- In a medium bowl, whisk together the flour, cocoa powder, cornstarch, baking soda, baking powder, and salt until well combined. On low speed, slowly add the flour mixture to the butter mixture. Mix until just incorporated.
- Use a silicone spatula to fold the quick-cooking oats into the cookie dough. Reserve 1/3 cup of the dark chocolate chips to garnish the cookies. Fold the remaining dark chocolate chips into the cookie dough.
- Preheat oven to 350 degrees.
- Use a cookie scoop or tablespoon to drop mounds of the cookie dough onto a Silpat or parchment paper-lined baking sheet.
- Bake the cookies for 9 minutes.
- After you remove the cookies from the oven, immediately press a few dark chocolate chips and red and green M&M’s into each cookie.
Suggestions:
- Do not preheat the oven until after you have mixed the cookie dough for this recipe. Allowing the dough to rest while the oven comes to temperature, allows the quick-cooking oats time to absorb some of the cookie dough moisture.
- After you remove the cookies from the oven, you will need to work fast to garnish the cookies with dark chocolate chips and red and green M&M’s. If you take too long, the cookies will set, making it hard to garnish the cookies.
- Make sure the chocolate chips on the cookies have completely set before you store them in an airtight container between sheets of wax paper.
- This recipe will yield approximately 3 dozen cookies.
Improvements:
- Replace the dark chocolate chips with semi-sweet, milk chocolate, or white chocolate chips.
- Fold a 1/2 cup of finely chopped walnuts or pecans into the cookie dough.
