Panko bread crumbs are the secret ingredient to these cinnamon-flavored powdered sugar cookies. The panko’s light and airy texture provides a delightful crunch that perfectly complements the sweetness of the powdered sugar and the subtle hint of ground cinnamon. These buttery cookies are incredibly easy to make and are guaranteed to be an instant crowd-pleaser.
I first heard of panko bread crumb cookies earlier this year and was instantly obsessed with the vintage recipe. They seemed like a great cookie to experiment with and make my own since the original recipe I discovered was a bit on the dull, plain, and non-adventurous side. I wanted a cookie with a little bit more personality. A cookie that screamed, “Hey there, look at me. Bet you can’t guess what I am? But after you take a bite out of me, you’re gonna be so very, very happy that we’re new best friends.” So, I decided to start my first panko cookie adventure by adding ground cinnamon. It seemed like a good place to begin, especially for the holidays. And, oh was I right. If you’re a fan of texture, these are the cookies for you. They’re sweet, cinnamony, wee powdered sugar clouds of crunchy amazingness. Normally, I rely on Grape Nuts to add a lot of texture to my cookies, like in these Peanut Butter Oatmeal Cookies with Grape Nuts and these Cran-Raisin Oatmeal Cookies with Grape Nuts, but now, I think I’ll find myself using panko a lot more instead. Good thing too, because I now have two large bags of panko in my pantry, due to my tendency to constantly overshop for ingredients. So, I’m pretty sure you’ll be seeing more panko cookies soon, after, of course, I decide which flavor to experiment with next.
Ingredients:
- 1/2 Cup Unsalted Butter, Softened
- 1/2 Cup Powdered Sugar (Additional for Rolling)
- 1 Teaspoon Ground Cinnamon
- 1/4 Teaspoon Kosher Salt
- 1 Tablespoon Vanilla
- 3/4 Cup All-Purpose Flour
- 3/4 Cup Panko Bread Crumbs
Directions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream the butter, powdered sugar, cinnamon, and salt together on medium speed for 2 minutes.
- Add the vanilla; mix for 30 seconds on medium speed.
- Add the flour and panko bread crumbs. On low speed, mix until the dough comes together. Do not over-mix.
- Place some powdered sugar in a small bowl. Roll the dough into 1-inch balls and then toss the balls to coat in the powdered sugar. Place the powdered sugar-coated balls onto a Silpart or parchment paper-lined baking sheet. Use your palm to flatten each cookie.
- Bake the cookies for 13 minutes.
- Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.
- Once the cookies have cooled completely, toss them in the bowl of powdered sugar again to coat.
Suggestions:
- Flattening the cookies helps them bake more evenly.
- The first time I made these cookies, I dredged them in powdered sugar again as soon as I removed them from the oven. The powdered sugar absorbed a lot of moisture from the hot cookies and looked a bit like glue. I think these cookies are much prettier if you wait until after the cookies have cooled completely before dredging them in powdered sugar for the second time.
- If you prefer a less sweet cookie, skip dredging them in the powdered sugar the second time. They’ll still be absolutely delicious.
- This recipe will make approximately 22 cookies. You may have more or less cookies depending on how small or large you roll them.
Improvements:
- Add finely chopped pecans or walnuts to the cookie dough.
- Replace the vanilla with maple or almond extract.
