I certainly won’t say that it was easy to pick a favorite recipe from last month because that would be a really big Pinocchio-nose-growing-lie, or should I say a really big Pinocchio-nose-growing-fib? Nope, if I’m being completely honest, it was pretty gosh darn challenging. That’s a good thing, right? That means that I’ve been eating a lot of yummy things and sharing those recipes with all of y’all. With recipes like Red, White, & Blue Ricotta Ice CreamKid-Friendly Buttered Rice with Pasta Stars, Oven-Roasted Cauliflower & Tomato Salad, and Triple Chocolate Ricotta Ice Cream, picking just one recipe quickly turned into a laborious task. Oh, and who forget Ginger’s Famous Island Beef Teriyaki, which has always been a family favorite?

Well, sadly, none of those recipes made the cut. Poor lil’ things. I’m sure they’ll get over it though, especially when they come to realize that they lost out to Olive & Feta Cheese Ham Biscuits. Honestly y’all, this is one recipe which I will never forget and which I will most likely find myself duplicating over and over again. It really was that good. I even reluctantly shared a few of these lil’ beauties with my neighbors, instead of hogging them all for myself. Let’s just say that it was probably the best “neighbor dinner” we’ve had in some time; there were absolutely no complaints, lots of oohs and ahhs, and not a single crumb left afterward. You can’t get much better than that.

Olive & Feta Cheese Ham Biscuits

Olive & Feta Cheese Ham Biscuits

Ingredients:

  • 2 1/4 Cups All-Purpose Flour
  • 2 Tablespoons Granulated Sugar
  • 4 Teaspoons Baking Powder
  • 1/4 Teaspoon Kosher Salt
  • 1/2 Cup Butter, Cold
  • 1/4 Cup Green Olives, Chopped
  • 1/4 Cup Kalamata Olives, Chopped
  • 1/2 Cup Feta Cheese, Crumbled
  • 1 1/4 Cup Heavy Whipping Cream
  • Extra Virgin Olive Oil
  • Thinly Sliced Ham Luncheon Meat

Directions:

  1. Preheat oven to 450 degrees.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into very small pieces and add it to the flour mixture. Use a pastry cutter or a fork to cut the butter into the flour for approximately 2 minutes.
  4. Stir the olives and feta into the flour mixture.
  5. Add the cream and stir to combine.
  6. Form the dough into a ball and place into on a floured surface. Pat the dough down until it is approximately 1-inch thick. Use a lightly floured biscuit cutter, glass, or cookie cutter to cut the dough into circles. Place the biscuits onto a Silpat or parchment paper-lined baking sheet. Roll any scraps back together and repeat the cutting process until all of the dough is gone.
  7. Bake for 12 to 16 minutes, or until done. Brush with olive oil immediately after removing from oven.
  8. Allow to cool slightly and then serve sliced in half with ham.
