<p>After a month off from truly being in the kitchen, I&#8217;m slowly attempting to make my way back. And thankfully, recipes like this one make it almost desirable. <li>Whisk together the olive oil, vinegar, hot honey, parsley, chili powder, salt, and onion powder in a small bowl.</li>
<li>Open the microwaved corn and pour it into a medium-sized bowl. Allow it to cool for a few minutes.</li>

<p><strong>Suggestions:</strong></p>
<ul>
<li>Cooking the corn a little less than the recommended time helps to prevent it from becoming mushy.</li>
<li>You can substitute fresh corn in this recipe if you choose. Simply boil the corn and cut it off of the cob. I would suggest using 4 ears of corn for this recipe.</li>
<li>Hot Honey is honey that has been infused with chilies and you can find it available in most markets. If you don&#8217;t have any on hand, you can substitute regular honey and a pinch of crushed red pepper flakes. Or, if you aren&#8217;t into spice, simply use normal honey instead.</li>
<li>This salad will easily serve 4 people. Double the recipe if you are making it for a barbecue, cookout, or picnic.</li>

<p>Lately, I&#8217;m finding that I&#8217;m not all that motivated to spend a lot of time in the kitchen. Hell, let&#8217;s just be completely honest, I&#8217;m not all that motivated to do just about anything really. In short, I&#8217;m not feeling it. I&#8217;m not feeling cooking, I&#8217;m not feeling baking, and I&#8217;m certainly not feeling like there&#8217;s any great need for me to plaster a fake smile on my face. Basically, I&#8217;m not feeling bright-eyed and bushy-tailed and ready to tackle the world, and in general, I&#8217;m really not feeling most people. Right now, these are all just annoying little things that I have to put up with and I am not happy about it.</p>
<p>However, there are those days when I force myself to pull up my big girl panties, smile at an annoying person as if I give a freaking crap what they are talking about, ignore the irritating and seemingly never-ending barking of my neighbor&#8217;s dogs, and force myself to wander into the kitchen in hopes that something good will come out of it. And you know what? Sometimes something good does come out of it, like this salad. And, as an added bonus, the crunch of this amazing salad almost drowns out the barking. Now, that&#8217;s something worth smiling about.</p>

<li>Fill a medium-sized pot 3/4-full with cold water. Then, place the pot on a stove over high heat.</li>
<li>Fill a large bowl 3/4-full with ice and then add cold water; set aside.</li>
<li>When the water on the stove comes to a rolling boil, add the frozen peas and corn. Cook for 5 minutes.</li>
<li>Drain the peas and corn and then place them in the pre-prepared ice bath for 15 minutes to cool.</li>
<li>In a large bowl, whisk together the remaining ingredients, except for the fennel, until well combined.</li>
<li>Skim any unmelted ice off of the peas and corn and discard. Drain the vegetables in a strainer, making sure to shake off as much water as possible.</li>

<li>I used frozen roasted corn for this recipe because it was what I had on hand, however, any type of frozen corn will work in this recipe.</li>
<li>For this recipe, the ice bath will stop the vegetables from overcooking, cool them down quickly, and help them retain their vibrant color.</li>
<li>Make sure to discard any unmelted ice from the peas and corn before you drain them. The ice will be floating at the top of the bowl, so this should be very easy to do.</li>
<li>For this recipe, I did not use the fennel fronds because my fennel bulb had been refrigerated for several weeks and they were rather droopy. If your fennel fronds are in nice shape, you can finely chop them and add them to the salad.</li>
<li>Save and freeze your fennel stalks. These can be used to make stock.</li>

<p><strong>Directions:</strong></p>
<p><strong>Corn Salad:</strong></p>
<ol>
<li>Preheat oven to 425 degrees.</li>
<li>Place the corn on a baking sheet and drizzle it with the 3-tablespoons of olive oil. Stir to combine and then roast for 25 minutes. Stir to combine again and then roast for an additional 7 minutes.</li>
<li>While the corn is roasting, fill a medium bowl two-thirds full with water and ice. Peel and thinly slice the onion and then cut each onion slice into quarters. Place the onion slices into the ice water for at least 30 minutes before draining well.</li>
<li>Place the drained onion slices and roasted corn into a large bowl; set aside.</li>
</ol>
<p><strong>Vinaigrette:</strong></p>
<ol>
<li>While the corn is roasting, fill a small pot with water and bring it to a boil.</li>
<li>Slice the dried chile in half and remove the stem and any seeds.</li>
<li>Place the chile halves into the pot of boiling water and turn off the heat. Soak the chile halves for at least 30 minutes before draining well.</li>
<li>Place the drained chiles into a food processor along with the remaining vinaigrette ingredients and purée until smooth.</li>
<li>Pour the vinaigrette over the corn and onion mixture and then stir to combine.</li>
</ol>

Peel and thinly slice the onion and then cut each onion slice into quarters. Place the onion slices into the ice water for at least 30 minutes before draining well.
</li><li id="yrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Place the drained onion slices and roasted corn into a large bowl; set aside.

</div><li id="yrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">While the corn is roasting, fill a small pot with water and bring it to a boil.
</li><li id="yrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Slice the dried chile in half and remove the stem and any seeds.
</li><li id="yrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Place the chile halves into the pot of boiling water and turn off the heat. Soak the chile halves for at least 30 minutes before draining well.

<p>I&#8217;m not in the mood to cook. I&#8217;m sure that in a day or two that will all change, but for now me + kitchen isn&#8217;t happening. Pretty much me + any room in our house isn&#8217;t happening right now. Our downstairs bathroom is still a non-bathroom, meaning that there are still no walls, shower, toilet, flooring, and certainly no fixtures to be seen anytime in the foreseeable future. There is a somewhat maybe finished sub-floor, but I&#8217;m sure at some point that will be ripped up as well for some reason or other. My two-year estimate for repairs seems less likely as each day passes.</p>
<p>To make matters worse, last week water started dripping from our one &#8220;good bathroom&#8221; into our living room above our fireplace. Please note that when I say &#8220;good bathroom,&#8221; that is an extreme exaggeration. It&#8217;s just lying in wait for the moment the other one is finished, and then it too will be getting the sledge hammer, just like the entire ceiling above our fireplace, which B.O.B. Bob annihilated this week. The whole ceiling above our fireplace is now gone; no drywall, no downcast mood lighting, and thankfully no more leaking water. Well, at least for today. I&#8217;m pretty sure that could change at any moment though. There are still mumblings about the office wall needing to be opened as well, but I am choosing to ignore those particular rumors.</p>
<p>You know how I said me + kitchen isn&#8217;t happening, well let&#8217;s just say me + B.O.B. Bob aren&#8217;t exactly besties right now either. Being severely allergic to drywall has made me even extra grumpy. I know that B.O.B. Bob the Builder tries his very best to keep things as contained as possible while &#8220;Tasmanian Deviling&#8221; drywall, but it inevitably ends with me having no skin left on my fingers and itching all over. That means that I am not in charge of feeding him/nurturing him during the upcoming week; these meatballs are about as far as I am willing to go. I&#8217;m sure that even he can manage to reheat them in the microwave, unless of course water starts leaking out of that as well.</p>

<li>Cook on low heat for 4 to 6 hours.</li>

<p><strong>Suggestions:</strong></p>
<ul>
<li>You can use either fresh or frozen blueberries in this recipe. If using frozen, cook the sauce for a couple of minutes longer before combining it with the corn and meatballs in the crockpot.</li>
<li>Frozen corn is perfect for this recipe, but frozen roasted corn is even better.</li>
<li>I used turkey meatballs in this recipe in lieu of beef. Use whichever kind of meatballs you prefer.</li>
<li>I&#8217;m not going to lie. Cleaning the crockpot after this recipe is a real pain in the tuckus. Soak the crockpot for at least 30 minutes, before you even attempt to go near it.</li>
