If it’s possible for a refrigerator to have a favorite season, my fridge’s favorite would definitely be summertime. On any given day during the summer, you’ll usually find it filled with fresh cherries, perfectly ripened tomatoes, miniature cucumbers, and more times than not, a bowl of gorgeous local blueberries. In-season blueberries are the perfect breakfast add-on, late-afternoon snack, or last-minute side. And occasionally, I’ll even get around to using them in a summer dessert like this one, which uses a spice cake mix to make moist, cakey, oatmeal-packed cookies.

These are the type of fresh fruit-filled cookies you’ll want to gobble up fast, so be prepared to share a few of them with your friends, family, and co-workers. Oh, and if your house is anything like mine, your kitchen floor’s favorite season might just be summer too. So I highly suggest double-checking the floor next to your kitchen counter after baking these cookies. You might just find a fresh blueberry or two hanging out there. Unless, of course, the cat finds them first.

Ingredients:

Cookies:

  • 1 (15.25-oz.) Box of Spice Cake Mix
  • 1 1/2 Cups Quick-Cooking Oats
  • 1/2 Teaspoon Kosher Salt
  • 1/2 Cup Unsalted Butter, Melted
  • 2 Eggs
  • 2 Tablespoons Honey
  • 1 Teaspoon Vanilla
  • 2 Cups Fresh Blueberries

Brown Sugar Oatmeal Topping:

  • 1 Tablespoon Unsalted Butter, Melted
  • 1 Tablespoon Light Brown Sugar, Packed
  • 1/2 Cup Quick-Cooking Oats

Directions:

  1. In a large mixing bowl, whisk together the cake mix, oats, and salt.
  2. Add the melted butter, eggs, honey, and vanilla; stir to combine.
  3. Gently fold the blueberries into the cookie batter until they are evenly distributed.
  4. Preheat oven to 350 degrees.
  5. Use a cookie scoop to scoop cookies out onto a Silpat or parchment paper-lined baking sheet.
  6. For the topping, use a fork to stir the melted butter and brown sugar together in a small bowl. Add the oats and stir until evenly coated.
  7. Top each cookie with a little bit of the brown sugar oatmeal topping.
  8. Bake for 12 to 14 minutes.
  9. Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.

  • I waited until after the batter had been made to preheat my oven. It gave the oats more time to absorb the liquid in the cookie batter.
  • These cookies are very moist and need to be refrigerated if they are not eaten within the first day or two of baking.
  • This recipe will yield approximately 3 to 3 1/2 dozen cookies, depending on how large you scoop them out.
