Looking back through the year, I realized that I truly don’t have that many breakfast recipes in my Table of Contents. That’s probably because B.O.B. Bob and I tend to eat pretty much the same things over and over again for breakfast. Eggs in all forms, toast and English muffins, and a whole lot of bagels from our favorite Bagel Cafe in town. I do occasionally make something special, but I’m just too lazy to worry about writing down all of the ingredients and directions first thing in the morning, so often those recipes never get shared with y’all. Thankfully the ones below did because they’re all pretty spectacular.
Breakfast Burrito Green Chile Enchiladas
I started off 2017 by making these breakfast burritos for a visiting houseguest and I have a feeling that I may start 2018 in exactly the same way. Houseguest or not, I think every year should begin with a decadent over-the-top breakfast. New Year’s diets don’t begin until at least the 2nd of January as far as I’m concerned.
Cranberry & Beer Breakfast Bundt Cake
I know, I know, cake for breakfast isn’t quite so healthy. However, when you feel like treating yourself to a special Danish pastry-like breakfast treat, I suggest you give this recipe a try. B.O.B. Bob and I literally ate this entire Bundt cake by ourselves. It was probably the best week of the year.
Sweet Strawberry Rhubarb Sauce
I don’t care if it’s toast, English muffins, biscuits, waffles, or pancakes you drizzle this sweet strawberry sauce upon, I promise you that you’re gonna love it. By the way, it’s also pretty fantastic on ice cream. Not that I’m promoting you eating ice cream for breakfast. Unless of course, you’re also eating cake alongside it.
Cake for breakfast? Well, of course. With all of the Bundt Bakers cakes I’ve made this past year, you better believe there have been than more than a few mornings where cake has been on the menu. There’s really nothing better. Add a banana alongside it and you’ve pretty much got one heck of a tasty meal to start the day.
This year, this photo-worthy breakfast recipe was responsible for me winning a year’s supply of Eggland’s Best Eggs, so you can easily see why it won the award for my favorite breakfast recipe of 2017. As far as I’m concerned, Quiche is pretty much the ultimate breakfast food. You can pack it full of whatever cheese, veggies, or meat your little heart desires to make it totally different each and every single time you make it. Who doesn’t love variety?
