<p>Around this time of year, it’s pretty rare for me to get the chance to bake anything special for Halloween since I’m usually still insanely busy setting up <a href="https://www.facebook.com/thehistoricherndonhalloweenhouse" target="_blank" rel="noopener"><span style="color: #ff715b;"><strong>The Historic Herndon Halloween House</strong></span></a>. Or, if I’m not up to my elbows in skeletons, I’m too stressed out over <a href="http://faithhopeloveandlucksurvivedespiteawhiskeredaccomplice.com/chewy-oatmeal-chocolate-toffee-cookies/" target="_blank" rel="noopener"><span style="color: #ff715b;"><strong>Christmas Cookies Week</strong></span></a> to even think about baking a festive Halloween treat to share with friends. Well, not this year. This year, I’m putting those leftover green M&M’s from last year’s Christmas M&M’s mix to good use. And, I’m throwing in some extra chocolate chips and edible candy eyeballs for good measure. I mean, honestly, how can anyone resist a chocolate oatmeal cookie with eyes staring out at you? I know I certainly can’t.</p>

<p><strong>Directions:</strong></p>
<ol>
<li>In a large mixing bowl, cream the butter and sugars together for 2 minutes on medium speed.</li>
<li>Add one egg; mix for 30 seconds on medium speed. Add the second egg; mix for 30 seconds on medium speed.</li>
<li>Add the heavy whipping cream and vanilla; mix for 30 seconds on medium speed.</li>
<li>In a medium bowl, whisk together the flour, cocoa powder, cornstarch, baking soda, baking powder, and salt until well combined. On low speed, slowly add the flour mixture to the butter mixture. Mix until just incorporated.</li>
<li>Use a silicone spatula to fold the quick-cooking oats into the cookie dough. Reserve 1/3 cup of the dark chocolate chips to garnish the cookies. Fold the remaining dark chocolate chips into the cookie dough.</li>
<li>Preheat oven to 350 degrees.</li>
<li>Use a cookie scoop or tablespoon to drop mounds of the cookie dough onto a Silpat or parchment paper-lined baking sheet.</li>
<li>Bake the cookies for 9 minutes.</li>
<li>After you remove the cookies from the oven, immediately press a few dark chocolate chips, edible candy eyeballs, and green M&M’s into each cookie.</li>
</ol>

<p><strong>Suggestions:</strong></p>
<ul>
<li>Do not preheat the oven until after you have mixed the cookie dough for this recipe. Allowing the dough to rest while the oven comes to temperature, allows the quick-cooking oats time to absorb some of the cookie dough moisture.</li>
<li>After you remove the cookies from the oven, you will need to work fast to garnish the cookies with dark chocolate chips, edible candy eyeballs, and green M&M’s. If you take too long, the cookies will set, making it hard to garnish the cookies.</li>
<li>If your edible candy eyeballs need to be adjusted, use a pair of clean tweezers to help adjust each eyeball.</li>
<li>Don’t be afraid to buy an extra bag or two of Christmas M&M’s during the holiday season. If you don’t use them for Christmas, you can always sort them out and use the red ones for Valentine’s Day and the green ones for these Green-Eyed Monster Chocolate Oatmeal Cookies. Also, nine times out of ten, you will most likely be able to find Christmas M&M’s already available in stores around the time of Halloween.</li>
<li>Make sure the chocolate chips on the green-eyed monster cookies have set before you store them in an airtight container between sheets of wax paper.</li>
<li>This recipe will yield approximately 3 dozen cookies.</li>
</ul>

</li><li id="yrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Add one egg; mix for 30 seconds on medium speed. Add the second egg; mix for 30 seconds on medium speed.
</li><li id="yrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Add the heavy whipping cream and vanilla; mix for 30 seconds on medium speed.
</li><li id="yrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">In a medium bowl, whisk together the flour, cocoa powder, cornstarch, baking soda, baking powder, and salt until well combined. On low speed, slowly add the flour mixture to the butter mixture. Mix until just incorporated.
</li><li id="yrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Use a silicone spatula to fold the quick-cooking oats into the cookie dough. Reserve 1/3 cup of the dark chocolate chips to garnish the cookies. Fold the remaining dark chocolate chips into the cookie dough.

</li><li id="yrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Use a cookie scoop or tablespoon to drop mounds of the cookie dough onto a Silpat or parchment paper-lined baking sheet.
