Ingredients:

  • 1/2 Cup Unsalted Butter, Softened
  • 1 Cup Light Brown Sugar, Packed
  • 1 Egg
  • 2 Teaspoons Vanilla
  • 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Kosher Salt
  • 1 1/2 Cups All-Purpose Flour
  • 1 (3.5-oz) Chocolate Bar, Roughly Chopped
  • 1/2 Cup Fresh Mint, Finely Chopped
  • Demerara Sugar

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, cream the butter and brown sugar together for 3 minutes on medium speed.
  3. Add the egg; mix for 30 seconds on medium speed.
  4. Add the vanilla; mix for 30 seconds on medium speed.
  5. Add the baking soda and salt; mix for 30 seconds on medium speed.
  6. Slowly add the flour 1/2 cup at a time on low speed. Mix until just combined.
  7. Fold the chopped chocolate and mint into the cookie dough until evenly distributed.
  8. Use a cookie scoop or tablespoon to scoop the cookie dough out onto a Silpat or parchment paper-lined baking sheet. Top each cookie with a little sprinkle of demerara sugar.
  9. Bake for 12 minutes.

Suggestions:

  • I used one bar of Noi Sirius 56% Bitter Sweet Chocolate Icelandic Chocolate for these cookies, however, you can use any type of chocolate you prefer. I highly suggest a bar of bittersweet or dark chocolate for this recipe.
  • Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.
  • This recipe will yield approximately 2 dozen cookies. It’s an easy recipe to double if you so desire.
