You really can’t beat a great chocolate chip cookie. However, if you add a few finely chopped Goo Goo Cluster candy bars to your cookie batter in addition to miniature chocolate chips and cocktail peanuts, your chocolate chip cookies will disappear practically as soon as you remove them from the oven. These chocolate-loaded, peanut and marshmallow cookies are definitely swoon-worthy.
I’m often asked by friends which town, city, or country I would most like to retire to with B.O.B. Bob. To be quite frank, that question makes absolutely no sense to me. Seriously? I don’t know how others choose to live their lives but why would I be living in a place I didn’t want to live in for the entire rest of my life? If I didn’t love where I lived, I’d pack up my ever-growing mountains and mountains of animal-themed dishware, grab the kitty, put gas in the VW, and head for greener pastures.
Now, I will fess up to having a big fondness in my heart for where I grew up in Cumberland, MD. However, I know that living there full-time would not work out so well for me, let alone anyone else. First, I’d gain about a million pounds from D’Atri’s famous cheesesteaks. Second, I’d most likely go completely psycho at the local Walmart, since that store almost always seems to make me a little crazy and filled will sudden rage.
After my hometown, I guess the only other place that I could possibly see myself living in for more than a few months would be Nashville, TN. Mind you, not because I could drink and dance all day and night on Broadway but because their food is just so gosh darn lip-smacking amazing. Nashville has all of the stuff I want to eat on a glorious cheat day. And, you know what? Every day would be a cheat day filled with crispy fried chicken, fluffy golden biscuits, unforgettable barbecue, and of course, Goo Goo Cluster candy bars.
Y’all, if you’ve never had a Goo Goo Cluster, you’ve been missing out on a truly unforgettable chocolate-covered candy sensation. Made in Nashville, the Goo Goo Cluster is considered the first combination candy bar ever sold. That means that instead of being just chocolate, it also contains marshmallow nougat, caramel, and peanuts. Sounds pretty freaking dreamy, right? Now, imagine that candy bar, all chopped up, inside of a sinfully delicious cookie. Heck, even I’ll fess up to that cookie being almost so stinking good that I just might have to seriously rethink my stance on moving somewhere else to live out my golden years.
Ingredients:
- 3/4 Cup Unsalted Butter, Softened
- 2/3 Cup Light Brown Sugar
- 1/4 Cup Granulated Sugar
- 1 Egg
- 2 Tablespoons Vanilla
- 2 1/4 Cups All-Purpose Flour
- 2 Teaspoons Corn Starch
- 1 Teaspoon Baking Soda
- 1/4 Teaspoon Kosher Salt
- 3 (1.75-oz.) Goo Goo Cluster Candy Bars, Finely Chopped
- 1/3 Cup Cocktail Peanuts, Roughly Chopped
- 1/4 Cup Semi-Sweet Miniature Chocolate Chips
Directions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream the butter and sugars together on medium speed for 3 minutes.
- Add the egg; mix for 1 minute.
- Add the vanilla; mix for 30 seconds.
- In a medium bowl, sift together the flour, corn starch, baking soda, and salt.
- Slowly add the flour mixture to the butter and sugar mixture; mix on low speed until just incorporated.
- Using a silicone spatula, mix in the chopped Goo Goo Cluster candy bars, peanuts, and miniature chocolate chips until evenly distributed.
- Use a cookie scoop or tablespoon to scoop 12 cookies out onto a Silpat or parchment paper-lined baking sheet. Bake for 11 to 13 minutes. Allow the cookies to cool for 5 minutes before removing them to a baking rack to finish cooling completely. Repeat with the remaining cookie dough.
Suggestions:
- To make the best-tasting cookies, it is important to make sure that all of the cookie ingredients are evenly distributed throughout the cookie batter.
- Store the cookies in an airtight container between layers of wax or parchment paper.
- This recipe will yield approximately 2 1/2 dozen cookies. The number of cookies you end up with will depend on how large you make each cookie.
Improvements:
- Replace the miniature chocolate chips with full-size chocolate chips, white chocolate chips, or peanut butter chocolate chips.
